Before sharpening, moisten or soak the stone according to the manufacturer’s recommendation. Place it steadily on the rubber base and keep a water film on the surface. Put the knife on the stone at a stable angle, for most European kitchen knives approximately 15–20° per side.
Sharpen with smooth strokes from heel to tip. Stable angle, even pressure and burr control are more important than force. With #1000, work calmly until a fine burr forms along the edge. With #240, work more carefully because the coarser grit removes material faster.
