DSR-1K6 steel
DSR-1K6 is a modern Japanese stainless steel developed for the production of high-quality kitchen knives, where emphasis is placed on the balance of hardness, blade durability, and corrosion resistance. Thanks to its fine structure, it allows for the grinding of very sharp and stable blades with a smooth cut.
The hardness is usually around 60–62 HRC, which ensures good edge retention while maintaining solid toughness. At the same time, the steel is relatively easy to sharpen and responds well to honing.
Similarity to other steels
DSR-1K6 is very similar in its properties to Japanese stainless steels AUS-6 and, to some extent, AUS-8. It offers a similar balance between hardness, corrosion resistance, and ease of maintenance. Compared to powder steels (e.g., VG-10 or SG2), it is less brittle and easier to grind, which will be appreciated especially by users looking for a practical and reliable knife for everyday use.
Main advantages of DSR-1K6 steel:
- high sharpness and clean cut
- good edge retention
- very good corrosion resistance
- easier to sharpen
- balanced ratio of hardness and toughness
DSR-1K6 is the ideal choice for chefs who want high-quality Japanese stainless steel that is easy to maintain and has a long service life in everyday use.
