Simple rule for choosing a honing rod

Up to 58 HRC, stainless or steel is usually fine. From 58 to 62 HRC, ceramic is safer and more universal. Above 62 HRC, choose ceramic or sharpening stone. Diamond is mainly for quick recovery of a duller edge, not daily gentle honing.

How to use a honing rod correctly?

Hold a stable angle and move smoothly from heel to tip. For most European knives, about 15–20° per side is common. Do not press hard. A few gentle strokes on each side are enough; if the knife still cuts poorly, use stones or professional service.

A honing rod is not the same as sharpening

A honing rod is mainly for fast maintenance. Stainless realigns, ceramic refines gently and diamond works more aggressively. Full stone sharpening restores the whole bevel and solves deeper dullness or damage. broušení nožů.

Not every honing rod suits every knife. For very hard, thin or brittle Japanese blades, work extremely gently or choose ceramic, sharpening stones or professional sharpening.

Care for a honing rod

After use, wipe away metal dust, food residue and grease. Store the rod so the working surface is protected. Ceramic models should be protected from falls.
