Dellinger was born from a passion for knives, cooking and quality craftsmanship. Since 2015, we have been creating our own collections and selecting kitchen knives and tools that are not only beautiful to look at, but above all work well in real kitchen use.
We do not want to sell you the most expensive knife. We want to help you choose the right one.
A good knife is not just about appearance. What matters is the steel, blade geometry, grind, ergonomics, balance and above all how the knife actually performs in use.
We have been dedicated to knives, their construction, steels, sharpening and practical use since 2015.
We create our own knife series and, when designing them, we focus not only on appearance, but also on materials, geometry, ergonomics and intended use.
A home cook needs a different knife from a professional, and someone looking for their first quality knife has different needs again. We help you choose according to your actual requirements.
Our work does not end with the sale. We can advise you on sharpening, edge care, choosing sharpening stones and using your knife correctly.
A beautiful Damascus pattern or an original handle can turn a knife into an exceptional piece, but appearance alone is not enough. When selecting and creating knives, we focus primarily on edge quality, correct blade geometry, suitable steel, heat treatment, ergonomics and balance.
That is why you will find both affordable knives for everyday cooking and Japanese and premium models for experienced cooks in our range. The right knife is not automatically the most expensive one – it is the one that suits what you want to do with it.
You do not need to know all the Japanese names and blade types. Start simply with what you will use the knife for most often.
For most households, we recommend starting with a Santoku or Gyuto.
Depending on how you use it, choose between a Gyuto, slicing knife, boning knife or butcher knife.
Nakiri or Santoku offers a comfortable blade shape for fast and precise vegetable preparation.
We will be happy to recommend a suitable knife or set based on the recipient’s experience, intended use and your budget.
Marek Šmíd, founder of Dellinger and a specialist in kitchen and Japanese knives, has been working with knives for more than ten years. During that time, hundreds of different knives, types of steel, grinds, handles and constructions have passed through his hands.
