High-performance stainless steel for kitchen knives

High-carbon stainless steel 10Cr15CoMoV combines the ability to form a very fine edge, long edge retention, good corrosion resistance and reasonable sharpening requirements.

10Cr15CoMoV is a Chinese high-carbon stainless steel developed for the manufacture of quality kitchen knives and precision cutting tools. Thanks to its combination of carbon, chromium, molybdenum, vanadium and cobalt, it can form a hard and fine edge that retains its cutting performance for a long time when used correctly.

In kitchen knives, its resulting hardness usually ranges approximately between 59 and 62 HRC. The exact value depends on the heat treatment used by the particular manufacturer. Selected Dellinger knives use precision vacuum hardening, and the final hardness can reach, for example, 61 ± 1 HRC.

10Cr15CoMoV steel is often described as a Chinese alternative to Japanese VG-10. The chemical composition of the two steels is very similar, but they are not completely identical materials or mutually standardised equivalents. When choosing a knife, it is therefore important to consider not only the steel designation, but also its origin, hardening, blade geometry and the quality of the final sharpening.

Fine and sharp edge

The high carbon content makes it possible to achieve a hardness suitable for creating a thin, very effective kitchen edge.

Good edge retention

Molybdenum and vanadium support wear resistance and help the edge retain its cutting properties.

Corrosion resistance

Approximately 15% chromium provides practical corrosion resistance during normal kitchen use.

What does the designation 10Cr15CoMoV mean?

The name of the steel is based on its chemical composition. The numbers and abbreviations indicate the main alloying elements that influence hardness, corrosion resistance, edge retention and the behaviour of the steel during heat treatment.

10Cr15CoMoV and VG-10: similar, but not identical

10Cr15CoMoV steel is often compared with Japanese VG-10 steel. This comparison has a real basis – both steels contain approximately 1% carbon, around 15% chromium and additions of molybdenum, vanadium and cobalt. In a well-made kitchen knife, they can therefore offer a similar type of practical performance.

Are they equivalents? They are close in chemical composition and practical properties, but they are not completely identical or mutually standardised steels.

The steel name is not the whole story

Two knives made from 10Cr15CoMoV can behave differently. Final performance is significantly influenced by heat treatment, achieved hardness, blade thickness, edge geometry, sharpening quality and the overall execution of the knife.

Hardness 59–62 HRC: what does it mean in the kitchen?

The steel itself does not have one fixed hardness. The final value is created during hardening and tempering. In kitchen knives made from 10Cr15CoMoV, the most common hardness is approximately 59–62 HRC.

Lower part of the range

Hardness around 59–60 HRC may provide a greater safety margin during less careful handling and usually also easier resharpening.

Higher part of the range

Hardness around 61–62 HRC supports long retention of a fine edge, but requires correct technique and protection from sideways loading.

Higher hardness does not automatically mean a better knife. For everyday use, the balance between edge retention, edge stability, toughness and ease of resharpening is important.

Vacuum hardening and hand sharpening

Selected Dellinger knives made from 10Cr15CoMoV steel use precision vacuum hardening. Heat treatment in a controlled environment with minimal oxygen exposure helps reduce undesirable surface oxidation and achieve the required structure and hardness of the material.

Hardening is followed by precise blade grinding and, in selected series, also hand-finishing of the edge. Correct geometry determines how easily the knife passes through food, how well the cut can be controlled and how stable the edge remains during normal use.

Purity, precision and harmony

In Dellinger Damascus knives, the high-performance cutting core is complemented by the pattern of contrasting outer layers. Flowing lines emphasise the elegance of the blade and represent purity, precision and harmony – values on which the Dellinger brand is built.

Monolithic, clad or Damascus blade

10Cr15CoMoV steel can form the entire blade, but it is very often used as the cutting core of a multi-layer construction. The outer cladding protects the sides of the core and, in Damascus knives, also creates a decorative pattern.

More layers do not automatically mean a sharper knife

The number of Damascus layers mainly affects the construction and appearance of the blade. Actual sharpness is determined by the cutting core, its heat treatment, thickness behind the edge, sharpening angle and the quality of the final sharpening.

Who are 10Cr15CoMoV knives suitable for?

Knives made from this steel are a good choice for home cooks and professionals looking for high cutting performance, long edge retention and practical corrosion resistance without the maintenance demands typical of traditional carbon steels.

What to watch out for

Kitchen knives made from 10Cr15CoMoV with a fine edge are not designed for chopping bones, portioning frozen foods, prying or twisting in the cut. A hard edge retains cutting performance well, but sideways loading or impact against hard material can damage it.

Sharpening 10Cr15CoMoV knives

10Cr15CoMoV steel can be maintained effectively using quality sharpening stones. A medium grit is usually suitable for routine edge restoration, while a finer stone is used for smoothing and finishing the bevel. Always adapt the specific angle to the geometry and original sharpening of the particular knife.

  • use a fine abrasive and low pressure for regular maintenance,
  • do not wait until the knife is completely dull,
  • maintain a stable angle while sharpening,
  • do not create an unnecessarily thin edge on a more robustly constructed knife,
  • clean the blade thoroughly after sharpening.

Proper care

Although 10Cr15CoMoV is a stainless steel with very good corrosion resistance, this does not mean it is completely maintenance-free. Prolonged contact with water, salt, acidic foods or aggressive cleaning agents can damage the surface.

  1. Wash the knife by hand in lukewarm water.
  2. Dry it immediately after use with a soft cloth.
  3. Do not place the knife in a dishwasher.
  4. Use a wooden or quality plastic cutting board.
  5. Do not cut on glass, stone, ceramic or metal.
  6. Store the knife so that the edge does not strike other metal objects.

Marek's tip

With a 10Cr15CoMoV knife, I would not look only at the number of Damascus layers or the HRC value. Blade thinness behind the edge, correct hardening and final sharpening are also crucial to cutting quality. Well-processed 10Cr15CoMoV can offer very high performance without making home maintenance unnecessarily complicated.

Do more Damascus layers mean a sharper knife?

Can a 10Cr15CoMoV knife be used to chop bones?

A regular kitchen knife with a fine edge is not intended for chopping bones. For bones and frozen foods, use a robust cleaver designed for impact loading.

Can a 10Cr15CoMoV knife be washed in a dishwasher?

It should not be. A dishwasher can damage the edge, blade surface and handle material. Wash the knife by hand and dry it immediately.
