Detailed information

Product detailed description

Kitchen knife Santoku Kanetsugu SHIUN VG-2

A versatile Santoku knife that comes from Japan. Santoku means "three virtues" - it can handle slicing, shredding and chopping meat, vegetables and fish. The Sheepsfoot blade has a straight edge and a blunt tip that runs parallel to the blade and then curls down towards the tip, like a grazing sheep. This blade pattern was originally designed for cutting and slicing work where a sharp point could lead to unwanted punctures or cuts. The blunt spine allows you to grip the blade securely with your fingers ("choking") or extend your finger to increase fine blade control for delicate work.

The blade of the knives is made of VG-2 steel core, which is inserted between 2 layers of two AUS-2 stainless steels . This steel is popular among knife makers and knife collectors for its properties and excellent performance. VG-2 steel has high strength and hardness, making it an ideal material for knife blades. The high hardness allows the knives to stay sharp longer and reduces the need for frequent sharpening. Another excellent feature of this steel is its corrosion resistance, these knives are stainless.

The octagon-shaped handle is made of beautiful Japanese oak wood. The handles are designed to fit perfectly in the hand and provide comfort. The blades are perfectly balanced and prevent hand fatigue. This ensures maximum control and accuracy. This knife is suitable for right and left hand use.

We recommend buying a sheath or a plastic cover for the knife.

Cleaning a kitchen knife:

Particles attached to the blade surface from aggressive substances can begin to corrode and form rust-like stains on the blade surface. However, it's not the blade that rusts, it's the attached particles. For example, baking soda is commonly used for removal, which when soaked forms a "slurry" and an old cork.

Kanetsugu Seki Japan – The tradition of Japanese swords in modern cuisine

Kanetsugu Seki Japan is a traditional Japanese knife brand originating in the city of Seki, which is considered the centre of Japanese sword making. Its history dates back to the 14th century, when famous samurai swords were manufactured here. It is this sword-making tradition that the Kanetsugu brand has brought to the world of kitchen knives. The company was officially founded in 1918 by master craftsman Matsujiro Kanetsugu, who continued the legacy of the legendary 14th-century swordsmith Kanetsugu Naoe. Now in its fourth generation, the modern company combines traditional craftsmanship with modern production technologies, while still priding itself on hand sharpening, polishing and precision workmanship.
