Product detailed description

Gyuto / Chef Kiritsuke knife 215 mm Dellinger® Longevity Damascus Edition

Universal Japanese-type chef knife with a long 215 mm Damascus blade, distinctive K-tip, 10Cr15CoMoV steel core, 61 ± 1 HRC hardness, STORMY WAVES pattern and elegant Figured sycamore wood handle.

Gyuto / Chef Kiritsuke knife 215 mm Dellinger® Longevity Damascus Edition

Gyuto / Chef Kiritsuke knife 215 mm Dellinger® Longevity Damascus Edition is a universal Japanese-type kitchen knife combining the practicality of a Gyuto chef knife with the distinctive geometry of a Kiritsuke knife. Thanks to the long blade, 55 mm blade height and sharply angled K-tip, it is suitable for meat, fish, vegetables, herbs, long draw cuts and precise tip work.

Kiritsuke traditionally combines elements of Yanagiba and Usuba knives. In practice, this means precision when portioning fish, efficiency when cutting vegetables and the ability to make long, clean cuts. This modern version has a double-bevel edge, making it more practical for everyday universal use.

The Dellinger® Longevity Damascus Edition series combines a Damascus blade, the STORMY WAVES pattern, 10Cr15CoMoV steel core and an elegant Figured sycamore wood handle.

Benefits of using a Gyuto / Chef Kiritsuke knife

Dellinger info Universal chef knife

The 215 mm blade is suitable for meat, fish, vegetables, herbs, portioning, slicing and long draw cuts.

Dellinger info Distinctive K-tip

The angled tip helps with precise trimming, detail work, vegetable cutting and clean cut guidance.

Dellinger info Double-bevel edge

The modern double-bevel grind is more practical for everyday use than traditional single-bevel variants.

Dellinger info Elegant Figured sycamore handle

The sycamore wood handle looks warm, luxurious and natural. Each piece has its own grain.

Damascus steel blade with the STORMY WAVES pattern

The cutting core is made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. This steel is popular for high hardness, excellent sharpness, corrosion resistance and easier maintenance.

The cutting core reaches approximately 61 ± 1 HRC and is placed between 66 layers of stainless steels. The Damascus pattern STORMY WAVES evokes a stormy sea and gives each knife a unique appearance.

The knife is intended for precise kitchen cutting, not for chopping bones, frozen foods or very hard ingredients. Long-lasting sharpness can be restored by sharpening on water stones.

Figured sycamore handle – sycamore wood as a symbol of longevity

The western-style Figured sycamore handle is made of sycamore wood with a distinctive decorative grain. Its texture may resemble flames, waves or fine stripes. This natural appearance gives the knife an elegant, warm and luxurious character.

Sycamore is often described as a tree of longevity thanks to its resilience, robustness and ability to reach great age. The Longevity series therefore symbolizes strength, lasting value and a tool designed to serve in the kitchen for many years.

Premium gift packaging

Knives from this series are carefully stored in an elegant gift box made of light wood. The packaging emphasizes the premium character of the series and makes the knife a suitable gift for lovers of quality craftsmanship, cooking and beautiful kitchen tools.

Cleaning the kitchen knife

Particles of aggressive substances attached to the blade surface may corrode and create stains that look like rust. In such cases, it is usually not the blade itself that rusts, but the attached impurities. To remove them, you can use baking soda mixed with a little water into a fine paste and an old cork.

Dellinger warranty

Products delivered by Dellinger come with a 100% satisfaction guarantee. Each product is carefully checked and comes with a lifetime warranty against hidden defects.
