Saiun – masterful knives made from Shirogami 1 steel
Tosa-Ichi Saiun knives represent a combination of traditional Japanese craftsmanship and the highest quality Shirogami 1 (White Paper Steel), produced by the renowned metallurgical company Hitachi Metals (now Proterial Ltd.). This steel, known for its exceptional purity and high carbon content, is among the best in the field of Japanese knife-making materials.
The blades have a traditional tsuchime (dimple) finish, which not only enhances their aesthetics but also aids in cutting by reducing the adhesion of food to the blade. The Shirogami 1 carbon steel core is hardened to HRC 62 and clad with soft SUS405 stainless steel, which ensures easier sharpening, higher durability, and longer blade life.
The handle is made of fine oak wood, has a traditional octagonal shape for a comfortable and firm grip, and is complemented by an elegant Black-Pakka collar that emphasizes the luxurious look of the entire series.
Each Saiun knife is made in Japan and continues the long tradition of tatara blacksmithing.
