Böhler-Uddeholm steel – premium stainless steel for professional knives
The Böhler-Uddeholm steel used in the Grand Chef series is a high-carbon stainless steel of the highest quality, developed in Austria and perfected in a Swedish-Austrian collaboration for use in precision tools and professional cutting.
What makes it special?
Extremely low impurity content (sulphur, phosphorus, etc.), which contributes to a uniform microstructure
Hardness HRC 61–62 – comparable to traditional Japanese carbon steels (‘hagane’), but without their corrosion
Excellent edge retention – with proper care, the blade will stay sharp for a very long time
High corrosion resistance – the knife can withstand the humid kitchen environment without rusting
Easy sharpening – unlike some extremely hard stainless steel alloys, it can be easily resharpened to its original sharpness
This steel is further processed in Japan using traditional methods – forged and ground to match the philosophy of Japanese knife making: sharpness, balance and a smooth cut.
