Original Japanese VG-10 cutlery steel combines high hardness, long edge retention, very good corrosion resistance and the ability to create a fine and precise kitchen edge.
VG-10, also known in Japanese as V金10 or V Gold 10, is a high-carbon stainless cutlery steel developed by Takefu Special Steel Co., Ltd. in the Japanese city of Echizen, Fukui Prefecture.
Its chemical composition was designed to offer a balance between high hardness, long edge retention, corrosion resistance and the ability to be resharpened. According to the manufacturer, it contains approximately 1% carbon, 15% chromium, 1% molybdenum, 0.25% vanadium and 1.55% cobalt.
VG-10 is often used as the cutting core of Damascus kitchen knives. The hard core forms the actual edge, while the outer layers protect the sides of the blade and create the characteristic Damascus pattern. The result is a combination of high practical performance and distinctive appearance.

What does the VG-10 designation mean?
The designation VG-10 is associated with the trade name V Gold 10. It is an original cutlery steel from Takefu Special Steel, not a generic designation for any steel with a similar composition.
Each alloying element has a different role in the steel. However, the final properties do not arise simply by mixing the elements – material purity, the manufacturing process and proper heat treatment are also essential.

VG-10 hardness and what it means
Takefu Special Steel specifies a hardness of at least 60 HRC for properly hardened VG-10. Finished kitchen knives most commonly reach approximately 60–62 HRC, although some heat-treatment methods can achieve an even higher value.
The exact hardness depends on the hardening temperature, cooling method, tempering and the desired properties of the particular blade. The knife manufacturer may prioritise maximum edge retention or, conversely, preserve a greater toughness reserve.
Around 60 HRC
The edge is generally easier to maintain and may offer a greater safety margin during less careful handling.
Around 61–62 HRC
Higher hardness supports long retention of a fine edge, but requires correct technique and protection against impacts and sideways loading.
Higher HRC does not automatically mean a better knife
Hardness is only one of the blade's properties. Final performance is also determined by geometry, thickness behind the edge, quality of heat treatment and the method of final sharpening.
Why is VG-10 used as a cutting core?
In many Damascus kitchen knives, VG-10 forms only the central layer. This layer reaches the edge area and provides its cutting properties. On both sides it is protected by softer or tougher layers of stainless steel.
This construction combines a hard cutting core with more durable blade sides. At the same time, the outer layers make it possible to create patterns reminiscent of waves, flowing water or traditional Japanese suminagashi – floating ink patterns.

The number of layers does not determine sharpness
A knife with 67 or 101 layers is not automatically sharper than a knife with fewer layers. Cutting performance is determined primarily by the core material, hardening, blade geometry and quality of the final sharpening.
Damascus pattern: etching, sandblasting and other finishes
The pattern of a multi-layer blade is emphasised by different treatment of the individual steels. A traditional method is controlled chemical etching, which reacts with each layer at a different intensity. Some knives also use fine sandblasting, polishing or a combination of several processes.
The type of finish affects the contrast, texture and final character of the surface, not the basic cutting properties of the core. It is therefore always advisable to check the specific description of the particular knife.
VG-10 and 10Cr15CoMoV: what is the difference?
Chinese 10Cr15CoMoV steel is often described as an alternative to VG-10. Both steels have similar carbon, chromium, molybdenum, vanadium and cobalt contents and can therefore offer a similar type of performance in a well-made knife.

Beware of unclear or misleading labelling
Takefu Special Steel warns that similar or imitation materials marketed under the VG-10 designation appear on the market. If the origin of the steel is decisive when purchasing, it is advisable to check the knife manufacturer's information and the seller's credibility.
This does not mean, however, that every knife made outside Japan must automatically use counterfeit steel. The origin of the steel itself and the country in which the knife was finished are two different pieces of information. What matters is a verifiable material supply chain.
There is no documented general export ban on VG-10
It is not correct to claim that the export of raw VG-10 from Japan is generally prohibited. Material availability may be governed by the manufacturer's commercial policy and distribution relationships, but this should not be confused with a blanket legislative ban.
Who are VG-10 knives suitable for?

VG-10 is not a steel for heavy chopping
Do not use regular kitchen knives with a fine VG-10 core for chopping bones, portioning frozen foods, opening packaging, prying or twisting in the cut. The hard edge retains cutting performance well, but improper sideways or impact loading can cause chipping.
Sharpening VG-10
According to Takefu, VG-10 has good machinability and can be sharpened effectively. For home use, we recommend quality water sharpening stones. Regular light maintenance is gentler than waiting until the blade becomes completely dull.
- use a medium-fine sharpening stone for routine edge restoration,
- a finer grit can be used to smooth and finish the bevel,
- maintain a stable angle and low pressure while sharpening,
- adapt the angle to the original geometry of the particular knife,
- use diamond abrasives carefully and without excessive pressure.

Caring for a VG-10 knife
VG-10 is a corrosion-resistant steel, not an absolutely maintenance-free material. Prolonged contact with salt, acidic foods, water or aggressive cleaning agents can negatively affect the blade surface.
- Wash the knife by hand in lukewarm water after use.
- Dry the blade immediately with a soft cloth.
- Do not place the knife in a dishwasher.
- Use a wooden or quality plastic cutting board.
- Do not cut on glass, stone, ceramic or metal.
- Protect the edge in a knife block, sheath, blade guard or on a suitable magnetic holder.
Marek's tip
VG-10 is an excellent kitchen steel, but the marking on the blade alone does not guarantee quality. When choosing, also consider the manufacturer, hardness, blade geometry and final sharpening. Well-processed VG-10 offers a fine cut, long edge retention and maintenance that even a home user can manage.
