Knife Sharpening Course

We regularly hold knife sharpening courses for beginners, where we’ll teach you how to sharpen knives on whetstones using the traditional Japanese method.

INSTRUCTIONS FOR USE

1. Coarse Sharpening (see Figure 1)

Suitable for very dull knives or for restoring the edge.

Place the knife in the first stage (COARSE) and pull the blade from heel to tip smoothly and evenly. Alternate between the left and right sides of the sharpening slot.

Recommended time:

• metal knives: 4–8 seconds
• ceramic knives: 6–10 seconds

2. Fine sharpening (see Figure 2)

For regular blade maintenance.

Use the second setting (FINE) in the same manner. Alternate between the left and right sides of the sharpening slot.

Removes burrs and smooths the blade after coarse sharpening.

Recommended approximately once a week with normal use.

3. Polishing (see Figure 3)

Final finishing of the blade.

Use the third stage (POLISH) in the same manner. Alternate between the left and right sides of the sharpening slot.

Ensures maximum smoothness and sharpness of the blade.

Recommended after each sharpening.

4. Replacing and cleaning the sharpening module (see Figures 4, 5, 6)

• Unplug the unit from the power outlet and open the cover
• Turn the knob counterclockwise and remove the module
• Insert the cleaned or new module and turn it clockwise
• Close the cover securely

WARNING

• Always pull the knife toward you; never push it forward
• Do not use on scissors, axes, or other unsuitable tools
• Do not use with water, oil, or lubricants
• Keep out of reach of children and pets

Compatibility and Limitations

Works for:

• kitchen knives
• filleting knives
• ceramic knives
• chopping knives

Not suitable for:

• scissors, axes, and tools of other shapes
• knives that do not fit or do not move freely in the slot
