French steel T5MoV
T5MoV steel – characteristics and uses
T5MoV is a martensitic stainless steel used mainly in more affordable knives for everyday use. Its composition and properties are similar to those of better-known steels such as 5Cr15MoV or X50CrMoV15, but it tends to be slightly harder and sharper when properly heat treated.

Chemical composition (approximate):
C (carbon): ~0.5% – provides basic hardness
Cr (chromium): ~15% – ensures stainless properties
Mo (molybdenum): ~0.5–1% – improves corrosion resistance and increases strength
V (vanadium): ~0.1–0.2% – finer carbides, better edge retention
Mn, Si: small amounts to stabilize the structure.
Properties
Hardness: approx. 55–58 HRC (depending on hardening)
Corrosion resistance: Good
Edge retention: Medium – better than basic stainless steels
Ease of sharpening: Very good
Toughness: Suitable for EDC and kitchen knives.
Uses
Kitchen knives – ideal for households and hobby chefs
EDC knives (Everyday Carry) – pocket knives, multi-tools, basic outdoor knives
Affordable work knives – where a balance between price and performance is important.
Advantages
Good corrosion resistance
Easy to sharpen even at home
Balanced ratio of hardness and flexibility
Affordable alternative to more expensive steels
What to watch out for:
Not intended for extreme use (cutting bones, prying, etc.)
Requires hand washing and immediate drying if you want to maintain shine and sharpness
