VG-1 steel
VG-1 is a high-quality Japanese stainless steel produced by Takefu Special Steel. It is one of the proven materials used in the manufacture of mid-range and high-end kitchen knives. It offers a very good balance between hardness, edge retention, toughness, and corrosion resistance.
The hardness of VG-1 steel knives is usually around 59–61 HRC, which ensures long blade life while maintaining good chipping resistance. Thanks to its fine-grained structure, it allows for high sharpness and a clean cut.

Similarity to other steels

It can therefore be considered a very balanced compromise between edge retention and easy maintenance.
