Japanese Chef's Knife WA-Kengata Gyuto 190 mm
Stainless steel with a Tsuchime hammered pattern and a core of VG10 steel. Knives from the Sakai Takayuki Kurokage VG-10 series with a non-stick KUROKAGE surface are coated with fluorocarbon resin. This superior technology prevents the sliced ingredients from sticking to the blade, while achieving an extremely smooth knife surface. KUROKAGE is a surprisingly developmentally more advanced technology than, for example, the MAC Non-Stick Coating knives. This is because the hammered, concavo-convex texture on the blade promotes a non-stick function, and because the blade core is made of premium VG10 stainless steel with a hardness of 60-61 HRC, which ensures excellent edge retention better than conventional chromium-molybdenum stainless steel MAC knives. The Bolster is made of water buffalo horn.
The Japanese WA-Kengata Gyuto/Chef 190 mm knife has a spine and edge that taper to a point for versatile use of exceptional cutting power. Slicing, slicing, cleaning meat, fruit and vegetables - nothing will be a problem for this unique Japanese-shaped knife.
