Product detailed description
MYTHICAL BEAST SERIES
An exclusive limited-edition set of four Dellinger kitchen knives featuring a cutting core made from premium powdered steel ZDP-189, a hardness of approximately 67 HRC, a San Mai – 3-layer construction and a hand-finished hand-rubbed satin finish.
Four legendary guardians united in one collection
Mythical Beast Series is more than a set of four high-performance kitchen knives. The collection draws inspiration from four mythical guardians of East Asian tradition. Each represents a different compass direction, season, element and character.
That is why each knife has its own handle colour and a unique decorative pin depicting its guardian. Vermilion Bird, Azure Dragon, White Tiger and Black Tortoise are not merely four individual knives – together, they form one carefully conceived collection.
Only 50 complete sets. All four knives are presented together in an elegant wooden case.

Four guardians. Four personalities.
Every knife in the Mythical Beast Series tells its own story through its colour, purpose and symbol. Discover the four guardians that together form one extraordinary collection.
VERMILION BIRD
Vermilion Bird, known as Zhuque in Chinese tradition and Suzaku in Japan, is the mythical guardian of the south. It is associated with summer, fire, energy and the life force.
Traditionally depicted as a majestic red bird surrounded by flames, it may resemble a phoenix. In the Four Guardians tradition, however, it is a distinct mythical being with its own symbolism.
Vermilion Bird embodies dynamism, ascent, renewal and energy. Fittingly, the largest knife in the collection features a striking red handle and a long Kiritsuke blade.
AZURE DRAGON
Azure Dragon, known as Qinglong in Chinese and Seiryu in Japanese, is guardian of the east. It is associated with spring, growth, vitality and the awakening power of nature.
The dragon holds a special place in Asian culture, symbolising strength, the potential for growth, energy and constant forward movement. The blue-green colouring of Azure Dragon evokes new life and the renewal brought by spring.
Its character is perfectly reflected in the versatile chef’s knife, the workhorse of this set, designed to handle a wide range of everyday kitchen tasks.
WHITE TIGER
White Tiger, Baihu in Chinese and Byakko in Japanese, protects the west. Traditionally, it is associated with autumn and the metal element.
White Tiger represents courage, determination, protection and a fighting spirit. Yet its strength is never chaotic – it is precise, controlled and ready to act at exactly the right moment.
This philosophy is embodied by the Santoku – a compact, nimble and exceptionally easy-to-handle all-round knife for preparing meat, vegetables, herbs and other ingredients.
BLACK TORTOISE
Black Tortoise, known as Xuanwu or Genbu in Japan, is guardian of the north. Traditionally depicted as a tortoise entwined with a snake, it symbolises winter and the water element.
Its strength lies neither in speed nor aggression. Black Tortoise represents stability, patience, resilience, perseverance and longevity.
The smallest knife in the collection – the paring knife – is therefore made for delicate, precise tasks such as peeling, trimming and preparation that require control and a sensitive touch.
Four Guardians. Four Blades. One Collection.
East, south, west and north. Spring, summer, autumn and winter. Each guardian represents a different force, but only together do they form a harmonious whole. The same idea unites the four distinct knife styles in the Mythical Beast Series.

ZDP-189 – the heart of the collection
The cutting core of all four knives is made from ZDP-189, a premium powdered steel prized for its ability to achieve exceptionally high hardness and retain a finely sharpened edge for a long time.
The blades in the Mythical Beast Series reach a hardness of approximately 67 HRC. This allows for an exceptionally fine, keen edge that maintains its geometry for a long time when used correctly.
The hard ZDP-189 cutting core is part of a three-layer San Mai construction that combines a high-performance core with outer blade layers.
High hardness makes it possible to create an exceptionally fine, keen edge with long intervals between sharpenings.
Hand-finished, hand-rubbed blade surface
Each blade is finished by hand using the hand-rubbed finish technique. Fine hand polishing produces an elegant satin texture, highlighting the clean lines of the blade and the character of its San Mai construction.
Because the finish is applied by hand, individual knives may show subtle variations. These details underline the craftsmanship behind this limited edition.
Handles designed around each guardian’s character
Each guardian has its own handle colour, while all four knives share the same premium construction and combination of materials.
Stainless steel bolsters made from SS316L form a robust, elegant transition between blade and handle.
The nickel silver spacer highlights the precisely layered materials used in the handle.
Composite resin gives each model its distinctive colour, depth and pattern.
Decorative aluminium and copper elements add further texture and visual depth to the handle.
Each handle is finished with a unique decorative pin showing the silhouette of its guardian: Vermilion Bird, Azure Dragon, White Tiger or Black Tortoise.

67 HRC edges demand proper care
Exceptionally high hardness delivers a very fine, high-performance edge, but it also increases sensitivity to inappropriate sideways pressure.
- do not use the knives on bones or frozen food,
- do not twist the blade in a cut or pry ingredients sideways,
- use a high-quality wooden or suitable synthetic cutting board,
- never wash the knives in a dishwasher,
- wash by hand after use and dry immediately,
- we recommend high-quality water sharpening stones; when restoring the edge, respect the measured angle of approximately 10° per side.
