Jan Punčochář is one of the best-known Czech chefs, and his many years of experience in professional gastronomy were directly reflected in the development of the entire Dellinger Essence. series.

All knives in the Essence series were created according to Honza’s requirements, experience and ideas of how a practical kitchen knife should work. This is therefore not simply a case of adding a famous name to finished products. The shapes, sizes and intended roles of the individual models are based on real tasks a chef handles every day.

The result is a complete collection of knives for small precision work, everyday cutting, vegetable preparation, meat processing, filleting, slicing and bread. Every model has a clear purpose – allowing customers to choose according to what they actually prepare.

It is not just a name on the blade

In some collaborations, the finished product comes first and the famous name is added later. The Dellinger Essence series was developed differently. Honza Punčochář and his experience helped shape the very concept and direction of the entire collection.

Each knife corresponds to a specific way of working. A small paring knife must allow precise control in the hand, a boning model must work safely around bones and joints, a slicing knife needs a sufficiently long edge and a chef’s knife must handle a wide range of everyday tasks.

One universal knife is not enough for everything

A well-chosen chef’s knife can handle most everyday tasks, but a specialised shape can be safer, faster and more precise for a particular job. That is exactly why the Essence series offers several different sizes and profiles.

Who is Honza Punčochář?

Jan Punčochář is a Czech chef with many years of professional gastronomy experience. His approach to knives is based primarily on everyday practice – a knife must feel good in the hand, be easy to control and perform exactly the task it was designed for.

A professional chef uses a knife differently from someone who picks one up only a few times a week. During a shift, a chef makes hundreds of repeated cuts, works with different ingredients and quickly notices whether a handle is uncomfortable, a blade unnecessarily robust or a shape unsuitable for the task.

This experience helped create a collection that is not aimed only at professionals. Essence knives are designed to be intuitive and practical for home cooks as well, especially those who want a useful tool without unnecessarily demanding maintenance.

We do not want to offer you only the most expensive or most striking knife. We want to help you choose the right knife for the work you actually do. That is why every Essence model has its own size, shape, name and clearly defined use.

If you are currently looking for just one knife, start with a versatile Chef, Gyuto or Santoku model. Later, you can complement it with a smaller Petty knife, a bread knife or a specialised meat knife.

Construction of the Dellinger Essence series

Essence knife blades are made from German 1.4116 stainless steel with a hardness of approximately 56–58 HRC. This steel is a practical choice for everyday kitchen use – it offers good corrosion resistance, reasonable toughness and easier edge restoration.

Unlike very hard Japanese or powder steels, the Essence series is not designed as a technical showcase of maximum HRC. Its goal is reliability, easy maintenance and everyday usability.

1.4116 stainless steel

A practical European cutlery steel suitable for everyday home and professional kitchen use.

Hardness 56–58 HRC

Balanced hardness makes maintenance easier while retaining a practical reserve of toughness in the blade.

Pakkawood handle

Stabilised laminated wood combines an attractive appearance with practical resistance to normal kitchen moisture.

Gradual blade tapering

In the Essence series, the blade gradually narrows toward the tip not only in width but also in thickness. This construction principle is known as tapering.

The thicker section near the handle contributes to stability and control, while the thinner front part of the blade makes precise work with the tip easier. The result is a more practical distribution of characteristics along the entire length of the knife.

Hand sharpening and physical inspection

Dellinger Essence knives are hand sharpened, and individual pieces undergo physical inspection. Overall workmanship, blade condition, edge and handle finish are checked.

Even a quality factory-made knife will not remain sharp forever. How often it requires maintenance depends on the cutting board used, the ingredients being cut, working technique and frequency of use.

Marek's tip

When choosing your first quality knife, I would start with the model that matches most of the work you do. If you often cook with fresh ingredients, choose Šéfík, Velký Šéf or Dámička. I would then add a smaller knife, Chlebák or Kostěj depending on what you prepare most often.

How to care for Essence knives

  • Wash the knife by hand in lukewarm water with a mild detergent.
  • Dry both the blade and handle thoroughly after washing.
  • Do not put the knife in the dishwasher.
  • Use a wooden or quality plastic cutting board.
  • Do not cut on glass, stone, ceramic or metal.
  • Do not use standard kitchen models on bones or frozen foods.
  • Maintain the edge regularly with a suitable honing steel or sharpening stone.
  • Store the knife in a block, sheath, protective rail or on a magnetic holder.

Standard Essence kitchen knives are not intended for chopping hard bones or frozen foods. The Chinese TAO knife is intended primarily for vegetables and universal cutting, not as a heavy butcher’s cleaver.

Can the knives be washed in a dishwasher?

They should not be. A dishwasher can damage both the edge and the handle surface. Wash the knives by hand and dry them immediately after washing.

Are the knives suitable as a gift?
