How to Properly Sharpen Knives on a KING Sharpening Stone
1. Navlhčení kamene
Before sharpening, simply moisten the stone. Throughout the entire process, the stone should remain damp – re-wet it whenever it starts to dry out.
2. Zajištění stability
Place the stone on a flat and stable surface. To prevent slipping, you can place it on a damp cloth, rubber mat, or paper towel.

Hold the knife at an angle of approximately 15–20 degrees to the surface of the stone. This angle is ideal for most kitchen knives and ensures optimal sharpness and edge durability.
4. Sharpening itself
For single-bevel knives (e.g., some Japanese models): Sharpen mostly on one side – dedicate 90% of the time to the main side and 10% to the opposite side.
For double-bevel knives: Sharpen evenly on both sides of the blade to maintain symmetry and sharpness.
5. Odstranění otřepů
After sharpening, fine burrs may form on the edge of the blade. To remove them, hold the knife perpendicular to the stone and lightly run the entire length of the edge several times – alternating between one side and the other.
Whetstone maintenance
After sharpening, rinse the stone with clean water to remove any metal residue and allow it to air dry completely (not on a radiator).
If depressions or unevenness develop on the stone over time, level them using a flattening (flattening) stone, to maintain a smooth and even surface for future sharpening.
