How to use RISAM sharpening stones correctly?
Before sharpening, check whether the stone needs soaking or only moistening. Place it securely in a holder or on a non-slip mat. Keep a stable angle; for most European kitchen knives this is approximately 15–20° per side. With Japanese knives, respect the original edge geometry.
Start with the grit according to knife condition. Use the coarser side for damaged or very dull edges. For regular maintenance, medium grit is enough. Continue with a finer stone to smooth the bevel and improve cutting performance.
Why use a flattening block and holder?
Water synthetic stones gradually hollow during use. An uneven stone worsens angle control and may create an uneven bevel. Regular flattening restores the working surface and improves sharpening accuracy.
A stone holder improves stability and reduces slipping. An angle guide helps beginners keep the sharpening angle. These aids are not mandatory, but they make first steps easier and results more repeatable.

Care for RISAM sharpening stones
After sharpening, rinse the stone from slurry and metal particles. Let it dry well and do not store it permanently in water unless the manufacturer recommends it. Check flatness and flatten the stone if hollows appear.
A clean, flat and properly maintained stone sharpens faster and more accurately. If the stone is clogged or hollowed, blade contact and angle control become worse.
