King TOISHI Combination Water Sharpening Stone JIS #250/800
The King Kitchen Toishi Hand Sharpening Stone combines two of the most common grit sizes for everyday kitchen use – a coarser #250 side for basic reshaping and a finer #800 side for sharpening and fine-tuning the blade. It's the ideal tool for anyone looking for a quick, practical and safe sharpening solution without needing to place the stone on a table or use a holder. Thanks to the plastic handle with integrated finger protection, sharpening is very comfortable and also suitable for beginners. The stone material is made of aluminium oxide (corundum) with a synthetic binder, which ensures even sharpening and a long service life. Sharpening is effective and gentle on kitchen blades.
Before use, the stone must be soaked for approximately 3 minutes until the surface is evenly moist. It does not need to be soaked for a long time – after a short swelling, it is ready for immediate use.

How to properly sharpen with the King #250 / #800 hand stone
1. Soak the stone:
Before sharpening, immerse the grinding part in water for approx. 1–2 minutes until air bubbles stop being released. The surface should remain damp during sharpening – add water as needed.
2. Choose the correct grit:
The #250 side is used to repair a blunt or serrated edge, or to quickly reshape the edge.
The #800 side is suitable for general honing and smoothing – it follows the coarse side or can be used alone for regular maintenance.
3. Grip and guidance:
Thanks to the ergonomic handle, hold the sharpening stone in your hand like a scraper. Position the knife at an angle of approximately 15–20° to the sharpening surface and draw the blade across the stone as if you were trying to slice off a thin layer.
4. Alternating sides:
Sharpen alternately on both sides of the blade until the damage disappears or a uniform edge is formed. Then switch to the finer side (#800) and repeat the movements to polish and align the edge.
✅ Final tips:
You can sharpen with a vertical stroke or a circular motion, as you prefer.
For regular maintenance, it is sufficient to use only the #800 side.
Regular sharpening is recommended approximately 1× per week with daily cooking.
✅ Sharpening stone maintenance
After sharpening, rinse the stone with clean water to remove any metal residue and allow it to air dry completely (not on a radiator).
If depressions or unevenness develop on the stone over time, level them using a flattening (flattening) stone, to maintain a smooth and even surface for future sharpening.
