Japanese Santoku chef knife from Kanetsune YH-3000 series

Very sharp Japanese Santoku knife from Kanetsune YH-3000 series. Santoku means three-faced or three virtues. It got this name because it is perfect for slicing meat, fish and vegetables. The Santoku knife is often recommended as a multi-purpose knife for home cooks and is more common in Japanese households than the Guyto knife. It has a taller blade than a chef's knife, with a curved tip at the end of the blade that allows the knife to slice and cut efficiently.

The Kanetsune YH-3000 knife series combines perfect functionality, ergonomics and a unique Japanese sense of design. Each knife is hand-ground and achieves exceptional to extreme sharpness at a core hardness of HRC 61-62. It is a masterpiece that comes from the city of knives, Seki-City, Japan. The use of Blue steel and modern technology guarantees you the highest possible quality among commercially produced knives. The very hard Blue Steel core is covered on each side with SUS410 stainless steel. Thanks to the Tsuchime finish, food is quickly released from the blade.
