Product detailed description
Chef's knife SANTOKU SOK Cocobolo White Damascus
The Santoku knife is the epitome of Japanese precision, balance and elegance. Its name translates as "three virtues", because this knife perfectly handles slicing, chopping and shredding - with a lightness, precision and elegance that every chef will appreciate. Santoku is ideal for processing meat, fish and vegetables and is one of the most versatile knives in Japanese cuisine.
The Sheepsfoot blade has a straight edge and a blunt spine that gently curves downwards towards the tip, resembling the silhouette of a grazing sheep. This shape has been designed for precision cutting without the risk of puncture. The blunt spine also allows you to guide the knife safely with your fingers ("choking") or by placing your index finger on the blade, giving you perfect feel and control with every cut.
The blade is milled with kullens (Granton edge) - fine longitudinal grooves that significantlyreduce friction between the blade and the food and prevent it from sticking to the surface of the knife. This makes slicing lighter, smoother and more precise, which you will especially appreciate when working with thin slices of fish, meat or moist vegetables.
An important detail that distinguishes Dellinger Santoku knives from conventional imitations is the height of the blade. It corresponds to traditional Japanese standards, which guarantees plenty of space for the fingers, better stability and more secure cutting guidance. The lower blades often found on cheaper knives can be uncomfortable to work with and the results can be disappointing - but here you'll experience a difference you'll know after the first cut.
Each Santoku Dellinger knife strikes the perfect balance between beauty, function and craftsmanship. It's a knife that inspires - with every touch, every cut, every movement.

Light and dark layers of steel form unique and intricate patterns of damascus steel
The blade of the SOK Cocobolo White Damascus series is a true masterpiece of precision craftsmanship and traditional Japanese craftsmanship. It is made of Damascus steel with a core of 10Cr15CoMoV steel (VG-10 equivalent) with a hardness of 61 ± 1 HRC, which ensures exceptional sharpness, strength and long blade life. The core is sandwiched between 72 layers of two stainless steels of different hardnesses (damascus steel) which together provide the perfect balance between strength, toughness and flexibility.
The surface of the blade reveals the fascinating structure of the individual layers, which create a shimmering, unique and unrepeatable damascus pattern. White damascus steel or white pattern-welded steel is characterised by its contrasting light and dark layers of steel that form unique and intricate patterns. These patterns can vary greatly, from simple lines to intricate mosaic designs. These contrasting characteristics contribute to the creation of visible layers. This subtle, wavy motif not only impresses with its appearance, but also minimizes friction when slicing and prevents food from sticking to the blade, allowing for a smooth, precise and comfortable cut. Each blade thus has its own unmistakable character - no two are exactly the same.
Unlike conventional damascus blades, which undergo chemical etching to enhance the pattern , SOK Cocobolo White Damascus blades are treated with a modern sandblasting method . In this process, the surface of the blade is exposed to a gentle stream of abrasive particles that remove the softer layers of steel, naturally revealing the structure of the damascus. The result is a fine matt, silky, glossy surface with high resistance to corrosion and mechanical damage without the need for chemicals.
As with the SOK Olive Sunshine Damascus series, precision vacuum heat hardening is applied to increase the strength, stability and durability of the steel. This method, together with hand sharpening, gives Dellinger knives exceptional sharpness, precision and durability.
The contrasting layers of damascus steel create an impressive light-dark effect that enhances the elegance of each blade. This visual motif of "white damascus steel " symbolises purity, precision and harmony - values on which the Dellinger brand is built.
Dellinger combines traditional craftsmanship with state-of-the-art technology. Perfect craftsmanship and hand processes result in a knife that is not just a kitchen tool, but an exceptional piece of craftsmanship - elegant, precise and made for those who appreciate perfection in every cut in the kitchen.
...and that handle
is made of exotic Cocobolo wood, which is sought after for its colour and texture. Cocobolo Cocobolo is a highly prized tropical hardwood from Central America, especially Mexico, Panama, Costa Rica and Nicaragua. Cocobolo is an extremely hard and dense wood with a natural oil content that provide excellent resistance to water and moisture. It is very stable and well resistant to changes in humidity and deformation. Due to its hardness, Cocobolo wood is difficult to cut and sand - the handles are ergonomically shaped and designed for excellent hand control. The specially designed shape of the bolster is suitable for Asian knife grip.
