The Santoku knife is the epitome of Japanese precision, balance and elegance. Its name translates as "three virtues", because this knife perfectly handles slicing, chopping and shredding - with a lightness, precision and elegance that every chef will appreciate. Santoku is ideal for processing meat, fish and vegetables and is one of the most versatile knives in Japanese cuisine.

The Sheepsfoot blade has a straight edge and a blunt spine that gently curves downwards towards the tip, resembling the silhouette of a grazing sheep. This shape has been designed for precision cutting without the risk of puncture. The blunt spine also allows you to guide the knife safely with your fingers ("choking") or by placing your index finger on the blade, giving you perfect feel and control with every cut.

The blade is milled with kullens (Granton edge) - fine longitudinal grooves that significantlyreduce friction between the blade and the food and prevent it from sticking to the surface of the knife. The blade of the SOK Cocobolo White Damascus series is a true masterpiece of precision craftsmanship and traditional Japanese craftsmanship. It is made of Damascus steel with a core of 10Cr15CoMoV steel (VG-10 equivalent) with a hardness of 61 ± 1 HRC, which ensures exceptional sharpness, strength and long blade life. The core is sandwiched between 72 layers of two stainless steels of different hardnesses (damascus steel) which together provide the perfect balance between strength, toughness and flexibility.

The surface of the blade reveals the fascinating structure of the individual layers, which create a shimmering, unique and unrepeatable damascus pattern. White damascus steel or white pattern-welded steel is characterised by its contrasting light and dark layers of steel that form unique and intricate patterns. These patterns can vary greatly, from simple lines to intricate mosaic designs. These contrasting characteristics contribute to the creation of visible layers. This subtle, wavy motif not only impresses with its appearance, but also minimizes friction when slicing and prevents food from sticking to the blade, allowing for a smooth, precise and comfortable cut. Each blade thus has its own unmistakable character - no two are exactly the same.

Unlike conventional damascus blades, which undergo chemical etching to enhance the pattern , SOK Cocobolo White Damascus blades are treated with a modern sandblasting method . It is very stable and well resistant to changes in humidity and deformation. Due to its hardness, Cocobolo wood is difficult to cut and sand - the handles are ergonomically shaped and designed for excellent hand control. How to care for the knife and what not to do with it


  • •Never wash the knife in the dishwasher. To maintain sharpness, hand wash and dry the knife immediately.
  • •Do not use the knife to cut hard and frozen foods. The blade may be broken or part of the blade may break off.
  • •Do not use the knife as a crowbar and avoid bending it.
