Kanetsugu Seki Japan
Seki Kanetsugu – traditional Japanese knives from the heart of Seki
The company Seki Kanetsugu is one of the most respected traditional manufacturers of Japanese knives and continues a blade-making tradition of more than 700 years in the city of Seki, Gifu Prefecture. For centuries, Seki has been regarded as one of Japan’s most important centres for the production of samurai swords and kitchen knives.
The history of the brand reaches back to the famous swordsmith Kanetsugu, who worked during the Nanbokucho period between 1336–1392. The modern company Seki Kanetsugu Hamono Co., Ltd. was founded in 1918 by the Kawamura family, who have continued the tradition of Japanese blade-making for several generations.
Seki Kanetsugu knives combine traditional Japanese craftsmanship with modern technologies such as:
precise cryogenic heat treatment
traditional convex grind inspired by samurai swords
multi-layer blades with high durability and an elegant pattern
SPG2 / SG2, VG-10, ZA-18 or AUS-8
Seki Kanetsugu knife series
Miyabi Isshin
The Miyabi Isshin series is an ideal entry point into the world of high-quality Japanese kitchen knives. These knives use a traditional SAN-MAI construction with an AUS-8 steel core and outer layers of SUS410, offering very good sharpness, easy maintenance and high corrosion resistance.
The series is known for its lightweight construction, thin Japanese grind and excellent balance. The knives feel remarkably light in the hand, pass smoothly through ingredients and are ideal for everyday use in both home and professional kitchens.
Zuiun
The Zuiun series was created to mark the 100th anniversary of Seki Kanetsugu and belongs among the manufacturer’s most luxurious lines. The knives use premium powdered SPG2 / SG2 steel, known for exceptional sharpness, high hardness and very long edge retention.
The series is characterised by an elegant Damascus construction, hand-finished grinding and precise craftsmanship inspired by traditional Japanese swords. Zuiun is designed for demanding cooks who require maximum cutting precision and luxurious finishing.
Zuiun Kiwami
The Zuiun Kiwami series represents the absolute pinnacle of Seki Kanetsugu’s production. The word “Kiwami” means “ultimate” or “extreme” in Japanese and perfectly reflects the philosophy of this premium line.
These knives use powdered SPG2 / SG2 steel with a hardness of around 63 HRC, multi-layer Damascus construction and an extremely durable black DLC (Diamond-Like Carbon) coating, which improves resistance to scratching, corrosion and wear.
Typical features include luxurious heptagonal black Pakka wood handles, a convex Hamaguri-ba grind and an exceptionally smooth cut with minimal resistance.
Pro-M
The Pro-M line is one of Seki Kanetsugu’s most popular professional series. These knives are designed for intensive everyday use in professional kitchens, where high cutting performance, comfort and long service life are essential.
The series uses ergonomic Pakka wood handles and a traditional convex grind inspired by samurai swords. Thanks to this geometry, the blade passes through ingredients exceptionally smoothly and provides excellent control during work.
Shiun
The Shiun series combines traditional Japanese aesthetics with modern materials and high functionality. It is characterised by an elegant hammered Tsuchime finish, which helps reduce food sticking to the blade during cutting.
The knives use high-quality VG-10 steel, offering excellent sharpness, long edge retention and very good corrosion resistance. The series is also known for its lightweight construction, high cutting performance and traditional Japanese Wa handles that provide excellent control.
The tradition of the city of Seki
The city of Seki is considered the heart of modern Japanese knife-making. Since the Middle Ages, famous samurai swords have been forged here, and today the city is still home to many traditional blade manufacturers.
The exceptional quality of local water, charcoal and steel helped create unique conditions for producing knives with outstanding sharpness, long service life and precise craftsmanship.
It is the combination of traditional Japanese craftsmanship, modern technologies and the philosophy of samurai swords that makes Seki Kanetsugu one of the most respected Japanese knife-making companies today.
