Product detailed description
Pirge PURELINE paring knife 90 mm
A light and agile kitchen knife for peeling, trimming and precise preparation of fruit, vegetables and smaller ingredients.
The Pirge PURELINE paring knife with a 90 mm blade is a practical tool for delicate kitchen tasks where a large chef’s knife would be unnecessarily robust. The short blade is easy to control and allows precise cutting around peel, cores or irregular surfaces of ingredients.
The blade is made from German stainless steel 1.4116 with a hardness of approximately 54 HRC. This combination offers good corrosion resistance, easy maintenance and quick restoration of the edge during everyday use.
The distinctive red ergonomic handle made from PPC polypropylene helps you quickly identify the knife among other kitchen utensils. Thanks to its low weight of just 27 g, working with the knife is light and comfortable.

What is a paring knife used for?
A paring knife is one of the smallest and most precise knives in the kitchen. It is designed primarily for tasks where you need full control of the blade. You can work with it on a cutting board or carefully in your hand, for example when peeling an apple.
| Use | Examples of ingredients | Advantage of the short blade |
|---|---|---|
| Peeling and trimming | Apples, pears, potatoes and other fruit or vegetables | Easy following of the ingredient’s shape |
| Coring and cutting out | Cores, stems, damaged parts and potato eyes | Precise removal of small parts without unnecessary waste |
| Cleaning ingredients | Mushrooms, radishes, smaller vegetables and herbs | Good control during detailed work |
| Larding meat | Preparing openings for bacon, garlic or herbs | Easy creation of a precise and narrow cut |
What is this knife not suitable for?
The paring knife is not intended for chopping bones, cutting frozen food, prying or forcefully opening packaging. Use the fine blade only for normal food preparation.
Stainless steel 1.4116 for everyday use
Steel 1.4116 is used in kitchen knives where corrosion resistance, toughness and easy maintenance are important. A hardness of approximately 54 HRC means the blade is neither extremely hard nor brittle, and its edge can be restored relatively easily.
This characteristic is practical both in the home kitchen and in professional environments where the knife is used repeatedly and needs to be easy to clean and maintain.
Why is higher hardness not always an advantage?
Harder steel can hold an edge for longer, but it is generally more demanding to sharpen and sometimes more sensitive to improper handling. For a small working knife, easy maintenance and toughness can be more practical than maximum hardness.
Ergonomic PPC handle
The handle is made from injection-moulded PPC polypropylene. This material enables a firm connection between the handle and blade, is easy to maintain and is suitable for regular kitchen use.
The ergonomic shape supports a secure grip, while the low overall weight makes precise control of the tip easier. The distinctive colour also helps you quickly find the knife and distinguish it from other utensils.

Washing, maintenance and sharpening
Although the knife construction allows easy cleaning, we recommend hand washing to preserve sharpness. After use, wash the knife with a mild detergent, rinse and dry it.
A dishwasher can accelerate edge dulling through contact with cutlery, dishes and the dishwasher basket. If you still choose to use one, select a gentle programme up to 55 °C and position the knife so that its edge cannot touch other objects.
- Cut on a wooden or quality plastic cutting board.
- Avoid glass, ceramic, stone and metal work surfaces.
- Do not leave the knife wet for long periods after washing.
- Maintain the edge regularly with a fine sharpener or sharpening stone.
- Store it so that the edge does not touch other metal objects.
You can find the necessary equipment in the knife sharpening category.
Marek’s tip
You will often use a small paring knife more frequently than you expect. When peeling and coring, do not try to cut with force – the short blade works best with calm, precise movements. Regular light sharpening is faster and gentler than waiting until the knife becomes completely blunt.
