Do not use the #240 side for every sharpening session
The coarse #240 grit removes material faster and is intended mainly for very dull or slightly damaged edges. For regular home maintenance, usually start with the #1000 side. This preserves both the blade material and the sharpening stone.
How should the set be used correctly?
Place the large rubber mat on a flat and stable worktop. It catches water and sharpening slurry and protects the kitchen work surface.
You can pour water over the stone, but it is better to soak it for several minutes before sharpening. Keep the surface wet during use.
Place the stone in the adjustable holder and tighten the movable jaw using the screws. Before sharpening, make sure the stone does not move.
Use the #240 side only when repair is required. For a normally dull kitchen knife, use the #1000 side and try to maintain a consistent angle.
After sharpening, lightly strop both sides of the edge several times on the leather. Always move the blade spine-first so that the edge does not cut into the leather.
Draw a grid on the sharpening stone with an ordinary pencil. If the lines disappear unevenly during flattening, continue until they have disappeared across the entire surface.
Sharpening set maintenance
- After sharpening, rinse the stone, holder, mat and flattening block with clean water.
- Allow the sharpening stone and flattening block to air-dry at room temperature.
- Do not store a wet stone in a closed container or dry it on a radiator or in strong sunlight.
- Protect the leather strop from water, grease and cuts from the edge.
- Do not put the holder or non-slip mat in the dishwasher.
- After sharpening, rinse the mat with water, wipe it with a sponge and allow it to dry thoroughly.
- Before every sharpening session, check the flatness of the stone and that the holder is securely tightened.
Sharpening safety
Work slowly without unnecessary pressure and keep your fingers away from the path of the edge. Always check the stone's stability before the first stroke. Do not test the knife's sharpness with your finger. The set is not intended for ceramic knives, and all parts should be kept out of reach of children.
