He has gained practical experience with Japanese kitchen knives, EDC knives, katanas, sharpening, edge maintenance and product testing in real use. Knife sharpening study in Tokyo

Marek studied Japanese-knife sharpening directly in Tokyo, Japan, where he trained for several weeks with Japanese specialists in KIYA stores. He focused on sharpening techniques, work with sharpening stones, edge maintenance, correct blade guidance and practical use of Japanese kitchen knives.

This experience helped him better understand differences between Japanese-knife types, geometry, steel hardness, blade construction and care requirements. He now uses this knowledge in assortment selection, customer advice, content creation and evaluation of how a knife behaves when sharpened, maintained and used.

Katanas

Since 2020, Marek has trained traditional cutting techniques with katana under Petr Donátek, founder of Kasumi Dojo, holder of the Menkyo Kaiden title and sensei of Kasumi Dojo. Petr Donátek has more than 40 years of martial-arts experience, is president of the Czech Toyama Ryu Federation and holds high technical grades including ČFT 7th Dan – Kyoshi, Kobujutsu 6th Dan – Renshi and Taihojutsu 6th Dan – Renshi.

This experience helps Marek evaluate katanas not only by appearance and workmanship, but also by handling, balance, safety, cutting dynamics and real training use.

Armadong Kali

For approximately the last three years, Marek has also trained Pekiti Tirsia Kali under instructor Aleš Brunner, an experienced teacher with more than 25 years of practice, the level Mandala 5. Hagdan in Pekiti Tirsia Kali and qualification as a Gold instructor of Armadong Kali. Thanks to this practice, he can judge EDC knives not only by catalogue data, but also by grip, safety, ergonomics, controllability and real handling behaviour.

Dellinger and Nože zVostra

The Dellinger brand grew from a passion for sharp knives, cooking, quality materials and honest craftsmanship. Marek Šmíd built it with the goal of offering customers products that are not only attractive at first glance, but also stand up to everyday kitchen use, food preparation, service and professional edge care.

The Nože zVostra project was created after Marek’s first trip to Japan and after his thorough study of Japanese-knife sharpening in Tokyo. After returning, he connected with Marek Neuman, who was already involved in buying, selling and sharpening Japanese knives. They shared an interest in sharpness, service quality and passing on practical experience.

From this collaboration, Nože zVostra developed as a service and sales organisation connected to Dellinger. Today it manages the sales network, employee training, service, knife repairs and sharpening, and sharpening courses for the public.
