Japanese knife Petty from Kanetsune AUS 10 PRO series

Beautiful multi-blade Petty knife from Kanetsune AUS 10 PRO series. The Petty Knife is a useful alternative to a large chef's knife when you need precise cuts, or for cutting green beans or other smaller vegetables and fruits, for example. They are also suitable for skewering and slicing meat. The rounded blade allows a slight swing when cutting. Its sharpness is ideal for preparing sandwiches of all kinds. The blade is made of high quality Japanese stainless steel AUS-10, which contains 0.95 - 1.10% carbon and a well-balanced composition of molybdenum, vanadium and other alloys. This stainless steel has excellent corrosion resistance and toughness, the hardness is HRC 59-60. The basic and simple Plywood handle has excellent grip and high wear resistance. Full tang construction (the blade of the knife goes through the whole knife and the handle is riveted with 3 rivets) guarantees the overall structural strength.

This series of knives is asymmetrically ground, which means that although the knife is designed as double-sided ground (suitable for right and left-handed users - so called 50/50), it is equipped with a 90/10 bevel for right-handed users. This sharpening is typical for Japanese users and guarantees a much sharper knife and better penetration of the cut material. There are also similar asymmetrical grinds, for example 70/30 or 80/20.

These knives can be resharpened in our grinding shop to your desired type of angle at your request for a fee.
