Japanese Kiritsuke chef's utility knife from Kanetsune Blue Steel "Zen-Bokashi" series

Robust, very sharp Japanese Kiritsuke knife from Kanetsune Blue Steel "Zen-Bokashi" series with a core of Blue steel #2, sandwiched between 11 layers of damascus steel. The knife spine and blade taper to a point for versatile use of the extraordinary cutting force. Slicing, slicing, cleaning meat, fruit and vegetables - nothing will be a problem for this unique Japanese-shaped knife. The Kiritsuke chef's knife is also suitable for cradling herbs, vegetables and nuts thanks to its higher tip. As the tip of the blade is modelled on a Japanese sword, it is also suitable for preparing dishes that require the use of the tip and also for decorative carving. The long blade and oval Japanese-style handle give you the best control when cutting and slicing.

"Zen-Bokashi" Damascus Blade series

The blade core of these knives is forged from high carbon Blue Stee l#2 (Aogami#2) steel. This steel, thanks to being alloyed with chromium and tungsten, has excellent edge retention and durability. It is very popular with Japanese knife makers. The hardness of the knife is 61-62 HRC. The beautiful damascus blade "Zen-Bokashi" has 11 layers of damascus steel on each side, together with the core, a total of 23. The blade is fitted with a traditional Japanese "D" shaped handle made of red sandalwood, the bolster is made of black Plywood.
