Octagonal Full Damascus Series Yanagiba/Sashimi Chef's Damascus Slicing Knife
The kitchen Sashimi knife has a very sharp blade made of 110 layers of two hard stainless and forged steels 10Cr15CoMoV + 9Cr18MoV. The blade of this knife undergoes hardening in very precise vacuum furnaces (vacuum heat treatment). Each knife is hand-sharpened and, with a hardness of around 60 HRC, achieves exceptional to extreme sharpness. This long slicing knife is sharpened on one side only. The knife is designed for cutting thin slices of fish for sushi and sashimi. With this knife you can easily cut large pieces of meat (roasts), but also thin slices of vegetables. Its beautiful, elegant thin blade is able to cut ingredients in long uninterrupted cuts, thus preserving their integrity and freshness. The Yanagiba is one of the most important traditional Japanese knife types and is part of many chefs' repertoire. Even the simplest tasks are elevated to an extraordinary experience with this beautiful and functional knife. Precision and new technologies make this Damascus steel knife unique and inimitable.

The handle in an octagon shape is made of exotic Rose-Wood (palisander) wood and buffalo horn with brass transitions. It is always carefully hand-polished and ergonomically shaped. Ideally designed for excellent hand control. The specially designed bolster shape is suitable for an Asian knife grip.
