The Dellinger® Carbon Fiber Octagon series is designed for cooks who want to combine premium appearance, low weight, comfortable grip and high cutting performance in one knife set. Each knife in this range combines a Damascus blade with the distinctive Ice Hypnosis pattern, a cutting core made of 10Cr15CoMoV steel and an ergonomic octagonal handle made of carbon fiber and G10.
The knives are designed to cover all main kitchen tasks – from universal cutting of meat, fish and vegetables through sushi and sashimi preparation to bread, fruit, herbs, smaller ingredients and detailed peeling work. Choose a knife by use
Each knife in the Dellinger® Carbon Fiber Octagon series has its own role. Gyuto, Santoku and Kiritsuke are ideal for main kitchen work. Bread is made for pastry, Sakimaru for fine sushi and sashimi preparation, while ko-Santoku, Utility and Paring are designed for smaller ingredients and detailed work.

Blade material: 10Cr15CoMoV, VG-10 and 66 layers of Damascus steel
Knives from the Dellinger® Carbon Fiber Octagon series have a cutting core made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. The core reaches approximately 61 ± 1 HRC and is protected by layers of stainless steels with different hardness levels.
A total of 66 layers of Damascus steel helps increase blade toughness and creates the characteristic Ice Hypnosis pattern. This distinctive Damascus appearance is not only aesthetic – the surface structure helps reduce friction during cutting and limits food sticking to the blade.
Octagonal handle made of carbon fiber and G10
The traditional octagonal handle is designed for a secure and comfortable grip. Most of the handle consists of carbon fiber set in resin, while the section near the blade is made of G10. This composite is strong, stable, resistant to moisture and requires no special maintenance.
The dark carbon structure evokes the depth of space and, together with the Damascus blade, creates a distinctive modern appearance. Thanks to low weight and good balance, the knives are comfortable for longer work and allow precise cut control.

Care, maintenance and sharpening of Carbon Fiber Octagon knives
Knives from this series are not intended for dishwashers. After use, wash them by hand, dry them immediately and store them so that the edge is protected. Do not use them for chopping bones, frozen foods or very hard ingredients. For safe storage, use an edge guard, magnetic stand or quality knife block.
Smooth edges can be restored on sharpening stones. If you are not sure about the correct procedure, use professional sharpening or a knife sharpening course. For the serrated Bread knife, we recommend professional sharpening when noticeably dull because a serrated edge requires a different method than a classic smooth blade.
