Daniel Luma × Dellinger – 30-day professional test of Okami AUS10 knives
Dellinger × Daniel Luma
Daniel Luma × Dellinger
New collaboration. New challenge. Three knives. 30 days in a professional kitchen.
Follow a real professional test of Dellinger Okami 3-Layers AUS10 kitchen knives during Daniel Luma’s month-long internship in one of the world’s leading restaurants.
Dellinger in the hands of a professional chef
Good kitchen equipment proves itself through real work. Not after a few cuts for the camera, but during long shifts, daily food preparation and repeated use.
That is the idea behind the Daniel Luma × Dellinger collaboration. Daniel is about to gain an exceptional professional experience – a month-long internship in one of the world’s leading restaurants – and together we decided to use this opportunity for an in-depth test of three Dellinger Okami 3-Layers AUS10 kitchen knives.
We selected and personalised the knives for Daniel. Now comes the most important part: 30 days of real professional work.
We do not want to show knives only in photographs
As with other Dellinger projects, we want to show our products where they make the most sense – in real use.
Daniel will therefore not judge the knives after just a few minutes. We will follow his first impressions, everyday use, edge retention, ergonomics, differences between the individual models and finally their condition after a full month of intensive professional use.
Real-world use
The knives will be part of everyday work in a professional kitchen.
30 days of testing
Not just a first impression, but experience gained over days and weeks of intensive work.
Professional perspective
An assessment by someone who works with knives every day and knows what he needs from them.
Ongoing results
We will continuously add experiences, photos, videos and the final evaluation to this page.
Daniel Luma
A chef who will really put the knives to the test
Daniel Luma works as an Executive Chef and also as a Private Chef. For him, gastronomy is not only about the finished plate, but also about precise preparation, efficient organisation and equipment he can rely on throughout a long working day.
That is exactly why the Daniel Luma × Dellinger collaboration makes sense. Daniel will not judge the knives as display products, but as working tools.
Professional Test
Dellinger Okami – 30-day professional test
Three different knives. Three different roles in the kitchen. One month of real use.
We want to find out not only how sharp the knives are on day one, but above all which model Daniel reaches for most often, why he uses it and how the individual knives perform over time.
What we will monitor during the test
Edge retention
How long the edge maintains useful cutting performance during regular professional use.
Comfort during a shift
How the knife feels, handles and performs in the hand during extended use.
Everyday use
Which type of knife Daniel uses most often and for which specific tasks.
Precision
How the different blade shapes perform during fine preparation and with different ingredients.
Condition after weeks of work
What signs of intensive daily use become visible on the knives over time.
Daniel’s conclusion
What only becomes clear after prolonged use and which knife becomes his favourite.
Equipment used
Three knives Daniel is taking with him
For the professional test, we selected three models from the Dellinger Okami 3-Layers AUS10 series. Each has a different length and a different role in everyday preparation.
Precise and compact work
Utility 150 mm
Compact all-purpose kitchen knife for fruit, vegetables, smaller pieces of meat, herbs and precise work. During the test, we will focus especially on its manoeuvrability and how often Daniel reaches for it during more detailed preparation.
Versatile Japanese style
Santoku 180 mm
Versatile Santoku suitable for vegetables, boneless meat, fish, fruit and herbs. Its taller blade and universal length make it a strong candidate to become one of the most frequently used knives in the entire test.
Main working knife
Chef 205 mm
Full-size all-purpose chef’s knife for everyday work with meat, vegetables, herbs and larger ingredients. With this model, we will be especially interested in how it performs during long shifts and intensive repeated use.
Complete test set

Want the same combination Daniel is using for the professional test? Utility 150 mm, Santoku 180 mm and Chef 205 mm are also available as a complete set.
Why Dellinger Okami 3-Layers AUS10?
The Okami series combines a core of Japanese AUS-10 steel with a three-layer blade construction and a durable G10 handle. The knives feature a stonewashed finish and are designed as practical working kitchen tools.
This time, however, we are not interested only in the technical specifications. We want to find out how these features perform in the real work of a professional chef.

We will add the first experiences from professional kitchen service during the internship.
The knife is only the beginning
The purpose of this collaboration is not simply to introduce another product. We want to show how a kitchen knife performs when it becomes a genuine working tool.
That is why we will continue to add real experiences, comparisons of the individual models, videos and the final evaluation after 30 days of professional work.
About the collaboration
This page is part of the Dellinger × Daniel Luma collaboration. The tested knives were provided to Daniel by Dellinger for long-term professional use.
We want to preserve the most important thing: genuine experience from real use. That is why we will publish not only the first impressions, but also how Daniel’s experience develops throughout the entire internship.
