A fast synthetic water stone for basic sharpening of ordinarily dull kitchen knives, creating a working bevel and regularly restoring the edge.

Shapton RockStar JIS #1000 is a versatile Japanese sharpening stone for users who want to restore the edges of kitchen knives by hand, accurately and without unnecessarily long sharpening. The JIS #1000 grit corresponds to an abrasive particle size of approximately 11 microns and represents the basic working stage for most ordinarily dull knives.

The stone cuts quickly, provides a consistent abrasive effect and is also suitable for harder steels used in high-quality Japanese knives. It does not need to be soaked for a long time before use – simply wet the working surface with water and maintain a thin film of water on it during sharpening.

The dimensions of 210 × 70 × 10 mm provide a sufficiently long and wide working surface for kitchen knives of various sizes. The stone is also suitable for sharpening selected craft and gardening tools, but it is not intended for ceramic knives.

What is #1000 grit suitable for?

JIS #1000 is the most commonly used basic grit for hand-sharpening kitchen knives. It can create a new working edge without leaving as coarse a bevel as lower-grit repair stones.

  • restoring an ordinarily dull kitchen knife,

  • regular basic sharpening of European and Japanese knives,
  • preparing the edge before continuing on a #3000 or #6000 stone,

When is a #1000 stone alone not enough?

If the knife has larger chips, a damaged tip, significantly altered geometry or is exceptionally dull, begin with a coarser RockStar #320 stone. The #1000 grit is not intended for fast, extensive blade repairs.

How to use the Shapton RockStar #1000

  1. Place the stone in a stable holder. It must not slide or rock during use.
  2. Wet the working surface with water. Prolonged soaking is not required.
  3. Choose the correct angle. Respect the original geometry of the particular knife; for standard kitchen knives it is often approximately 15–20° per side.
  4. Move the blade evenly along its full length. Use controlled pressure and work gradually from the heel to the tip.
  5. Check for burr formation. Once it forms on one side, move to the other side of the blade.
  6. Gradually reduce the pressure at the end. Stabilise the edge with light strokes and remove the remaining burr.
  7. Rinse and dry both the stone and knife. Allow the stone to dry naturally before storage.

Use water only

Do not use honing oil on the Shapton RockStar stone. Maintain a film of water on the surface while sharpening and add a small amount of clean water as required.

Sharpening stone care

After every sharpening session, rinse the stone with clean water and remove sharpening slurry and metal particles from its surface. Allow it to air-dry at room temperature. Do not expose a wet stone to direct sunlight, intense heat or frost.

Regularly check the flatness of the working surface. If a hollow develops in the centre, flatten the stone using a suitable diamond flattening plate or lapping plate. A flat surface makes it easier to maintain a stable angle and helps create an even bevel.
