1.4116 steel is a corrosion-resistant martensitic steel used primarily for kitchen, butcher and catering knives. You may also encounter the designation DIN X50CrMoV15 or related commercial and national names.
The resulting properties of a knife do not depend solely on the name of the steel. Heat treatment, blade grind, blade thickness, edge geometry and the quality of the final sharpening also play an important role. Two knives made from the same steel may therefore not perform in exactly the same way.

How should knives made from 1.4116 steel be sharpened?
A sharpening stone with a grit of approximately #1000 is suitable for restoring a normally dulled edge. For a finer finish, you can continue with a stone of approximately #3000 to #6000. Always adapt the exact process to the condition of the edge and the construction of the particular knife.
A sharpening angle of approximately 15–20° per side is often used for conventional European kitchen and butcher knives made from this steel. Maintaining the angle evenly along the entire edge is more important than trying to achieve the smallest possible angle.
