Sharpening in two consecutive stages

1. Restoring the edge on the JIS #1000 stone

2. Fine finishing on the JIS #3000 stone

How to use the set correctly

  5. Once a continuous cutting edge has formed, replace the #1000 stone with the #3000 stone.
  6. Use lighter pressure on the #3000 stone and finely finish the edge.
  7. Rinse the knife and dry it thoroughly immediately.
  8. Clean the stones with the Shapton 0505 disc as required and allow all components to dry separately.

Sharpening is not about force, but about precise blade guidance and a stable angle. Gradually reduce the pressure on the finer #3000 stone and perform the final strokes very lightly.

When is the #1000/#3000 combination not enough?

The #1000 and #3000 stones are intended primarily for normally dull kitchen knives and regular home maintenance. Deeper chips, a severely neglected edge or a significant change in geometry may require a coarser sharpening stone.

For faster repairs, you can use the Shapton RockStar JIS #320 before the #1000 stone.

How to use the Shapton 0505 cleaning disc

Wet the cleaning disc with water and move it across the surface of the sharpening stone using light, even strokes. It helps remove trapped metal particles, sharpening slurry and dirt that can gradually reduce the abrasive performance.

The disc has one flat and one grooved working side. Both sides can be used. Do not apply excessive pressure during use, and rinse both the disc and the stone regularly with clean water.

Cleaning disc and stone flattening

The Shapton 0505 disc is suitable for routine cleaning and light maintenance of the sharpening surface. For a significantly dished stone, a larger flattening plate is more suitable for precise, full-surface levelling.

Care of the sharpening set
