Chef / Kiritsuke 215 mm Dellinger® Carbon Fiber Octagon is a universal Japanese-type kitchen knife that combines the elegant shape of a traditional Kiritsuke with the practicality of a modern chef’s knife. Thanks to the long blade, distinctive angled tip and low weight, it is suitable for precise work with meat, fish, vegetables and herbs.
Kiritsuke traditionally combines elements of Yanagiba and Usuba knives. In practice, this means it handles long draw cuts, fish portioning, precise meat slicing and efficient vegetable cutting. This modern version has a double-bevel edge, making it more suitable for universal everyday use in home and professional kitchens.

Damascus steel blade with the hypnotic Ice Hypnosis pattern
The cutting edge has a core made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. This steel is popular for high hardness, excellent sharpness, good corrosion resistance and easier maintenance.
The cutting core reaches approximately 61 ± 1 HRC and is placed between 66 layers of stainless steels with different hardness levels. This layering provides toughness, stability and blade durability. The unique Damascus pattern Ice Hypnosis creates a strong visual effect and helps reduce friction and ingredient sticking.
Long-lasting sharpness can be restored on water stones. The knife is intended for precise cutting, not for chopping bones, frozen foods or very hard ingredients.
