Product detailed description
A lightweight and easy-to-carry Fruits Knife No.212 with a 93 mm blade, natural cherry wood handle and precisely fitting wooden sheath.
Kanetsune KC-073 Fruits Knife No.212 is a compact Japanese knife designed primarily for slicing, trimming and portioning fruit. The 93 mm blade provides good control when preparing apples, pears, citrus fruit and other smaller ingredients.
The knife is fitted with a handle made from natural wild cherry wood and comes with a sheath made from the same material. The wooden sheath protects the edge during storage and allows the knife to be carried more safely in luggage, a picnic basket or a chef’s kit.
The blade is made from 420J2 stainless steel. The knife itself weighs only 25 g, or 35 g with the sheath. The KC-073 is one of Kanetsune’s long-established products and comes directly from the Japanese city of Seki.

93 mm blade
The compact length provides good control when slicing, peeling and dividing smaller pieces of fruit.
420J2 stainless steel
Practical stainless steel offers good corrosion resistance and easy maintenance for everyday use.
Cherry wood
Both the handle and protective sheath are made from natural wild cherry wood with its own unique grain.
Made in Seki
The knife is made in the Japanese city of Seki, one of the best-known centres for knife and cutting-tool production.
A practical fruit knife for home and travel
Kanetsune KC-073 is designed as a lightweight and user-friendly knife that does not take up much space. It is suitable for everyday fruit preparation at home, in the garden, on a picnic or while travelling, provided it is transported in accordance with local regulations.
The short blade is easy to control and allows precise control over both the length and direction of the cut. The knife can also be used for smaller vegetables, cheeses and other soft foods that do not require a long or robust blade.
| Use | Examples | Advantage of the 93 mm blade |
|---|---|---|
| Slicing fruit | Apples, pears, citrus fruit, peaches or plums | Good control when portioning smaller fruits |
| Trimming | Removing peel, stems and damaged parts | Precise tip control and reduced unnecessary waste |
| Smaller vegetables | Radishes, cucumbers, tomatoes or mushrooms | Easy handling for quick kitchen tasks |
| Picnic and snacks | Fruit, soft cheeses and other small foods | Low weight and protective wooden sheath |
What is the knife not designed for?
Do not use the Kanetsune KC-073 on bones, frozen foods, hard stones, for chopping or prying. It is a lightweight knife designed for fruit, smaller ingredients and everyday kitchen tasks.
Wooden handle and protective sheath
The handle and sheath are both made from natural wild cherry wood. Each piece may therefore have slightly different grain, shade or colour transitions. These natural differences are not defects, but normal characteristics of genuine wood.
The wooden sheath protects the edge from impacts and reduces accidental contact with the blade. At the same time, it protects other items stored in luggage or a drawer. However, the knife must always be clean and completely dry before being placed in the sheath.
The sheath is not intended for a wet knife
Moisture trapped inside the wooden sheath can affect both the blade and the natural material. After washing, dry the knife thoroughly and fit the sheath only once the knife is completely dry.
420J2 stainless-steel blade
The blade is made from 420J2 stainless steel. This material offers good corrosion resistance, toughness and easy maintenance. It is suitable for a lightweight fruit knife where practicality and easy restoration of the edge are important.
The term “stainless steel” does not mean complete resistance to corrosion under all conditions. Fruit acids, salt and prolonged moisture can affect the blade surface, so wash the knife after use and dry it immediately.

Cleaning and care
- After use, wash the knife by hand using a mild detergent.
- Dry both the blade and wooden handle thoroughly and immediately.
- Do not put the knife or sheath in the dishwasher.
- Do not leave the handle or sheath submerged in water for long periods.
- Place only a clean and completely dry blade into the sheath.
- Do not leave the knife contaminated with fruit acids or salt for prolonged periods.
- Store it in a dry place away from heat sources and prolonged moisture.
Sharpening and edge protection
Check the edge regularly and restore it using a suitable fine sharpener or sharpening stone. Regular light maintenance is gentler than waiting until the blade becomes completely blunt.
Maintain a consistent angle when sharpening and do not remove more material than necessary. If you are unsure of the correct procedure, we recommend professional sharpening.
Safe use and carrying
- Cut on a stable wooden or high-quality plastic cutting board.
- Always guide the knife away from your fingers and the other hand.
- Do not use it on bones, frozen foods or hard stones.
- Fit the sheath carefully and without excessive force.
- When carrying the knife, check that the sheath stays securely on the blade and cannot slide off on its own.
- Do not carry the knife loose in a pocket.
- Before travelling, check the current rules for carrying knives in the relevant country and with the specific carrier.
- Keep it out of reach of children.
Marek’s tip
The KC-073 is a pleasantly lightweight fruit knife that can be safely stored outside a kitchen block thanks to its wooden sheath. Always dry the blade perfectly before fitting the sheath. Protecting natural wood from prolonged moisture is essential.

Craftsmanship and materials
Kanetsune Seki knives combine modern manufacturing precision with attention to blade geometry, edge grinding, knife balance and comfortable grip. Individual series differ in blade construction, steel type, hardness, edge shape and handle material.
The range includes stainless steels for easier maintenance, multi-layer blades, Damascus constructions and traditional carbon steels. Selected models use materials such as VG-10, SG2, Aogami or Shirogami, valued for sharpness, hardness and the ability to take a very fine edge.
Handles differ by model series. Kanetsune uses both traditional Japanese wooden handles and more modern Western-style constructions. Selected knives feature materials such as magnolia, rosewood, pakka wood or composite materials.
Care for Kanetsune Seki knives
As with most quality Japanese knives, proper maintenance is important. We recommend washing Kanetsune knives by hand, drying them immediately after use and not storing them loose in a drawer without edge protection. Carbon and multi-layer blades should be protected from moisture.
- Hand washing: do not wash the knives in a dishwasher and dry them immediately after use.
- Suitable cutting board: use a wooden or high-quality plastic board, not glass, stone or ceramic.
- No hard ingredients: do not use Japanese kitchen knives on bones, hard or frozen foods unless they are explicitly designed for it.
- Edge protection: use a sheath, saya, magnetic holder, block or edge guard.
- Sharpening: water sharpening stones are ideal for maintaining sharpness.
- Blade oil: for more sensitive blades and longer storage, use a very thin layer of protective oil.
