What is a Gyuto knife?

The name Gyuto can be loosely translated as “beef knife”. Today, however, it refers to a versatile Japanese chef’s knife used for a much wider range of ingredients. Its shape resembles a European chef’s knife, but it usually feels lighter and offers more precise control of the cut.

The blade is usually longer and narrower than that of a Santoku. It gradually tapers towards the tip, allowing it to handle not only larger ingredients but also precise work when trimming meat, portioning and finishing cuts.

Gyuto can be used for cutting boneless meat, vegetables, fruit, herbs and fish. However, it is not intended for chopping bones, prying, opening packaging or cutting frozen food.

Which Gyuto blade length should you choose?

If you are choosing your first Gyuto and have no special requirements, start with a length of 200–210 mm. It offers sufficient reach for larger ingredients while remaining easy to control in everyday cooking.

Gyuto, Santoku or European chef’s knife?

The distinction between Gyuto and chef’s knife is not always exact in modern kitchen knives. When choosing, therefore focus primarily on the actual blade length, height and profile, handle type and steel used, not only on the product name.

What can you use Gyuto for?

Boneless meat

Cutting raw meat, portioning boneless cuts, trimming smaller tendons and preparing meat for steaks or strips.

Vegetables and fruit

Cutting onions, cabbage, root vegetables, peppers, pumpkins without hard stems and other small and large ingredients.

Herbs

Depending on the specific model, the curvature of the edge allows a smooth rocking motion when chopping herbs.

Precise work with the tip

The more pronounced tip helps with scoring, trimming ingredients and finishing precise cuts.

What should Gyuto not be used for?

Gyuto is not a cleaver. Do not use it to cut bones, frozen food or exceptionally hard ingredients. Do not use the blade for prying, opening cans or as a screwdriver. Side pressure can damage the fine edge or tip.

How to choose blade steel?

Japanese or Western handle?

Japanese WA-style handle is usually light and may have an oval, octagonal or another traditional profile. It shifts the perceived balance more towards the blade and appeals to customers who prefer a lighter knife with precise control.

Western handle with handle scales usually feels fuller and resembles the grip of a classic European chef’s knife. It often suits customers switching from standard European equipment.

There is no universally best option. What matters is how it feels in the hand, the handle size, weight distribution and grip style. When working with Gyuto, we recommend gripping it at the transition between blade and handle, the so-called pinch grip.

How to cut correctly with a Gyuto knife?

  1. Hold the knife securely: your thumb and index finger can gently grip the blade just in front of the handle.
  2. Guide the cut smoothly: use a forward or backward slicing motion instead of pressing hard straight down into the cutting board.
  3. Adapt the motion to the profile: a more curved edge allows a rocking cut, while a straighter profile is better suited to cutting downwards and forwards.
  4. Protect your fingers: tuck the fingers of the hand holding the ingredient into a safe “claw” grip.
  5. Do not use the side of the edge as a scraper: move ingredients with the spine of the blade or a kitchen scraper.

The cutting board has a major effect on edge life

Use a wooden cutting board or a high-quality synthetic material designed for kitchen knives. Glass, stone, ceramic and metal quickly dull the edge and may increase the risk of damage.

The cutting board should be large enough for the entire blade length and the ingredient being cut. For a Gyuto around 200–210 mm, we therefore recommend a larger, stable work surface.

Care, cleaning and sharpening

Hand washing

Wash the Gyuto by hand after use with a soft sponge and regular dishwashing detergent. Do not leave the knife in water for long and do not put it in the dishwasher.

Immediate drying

Dry the blade and handle immediately after washing. This step is essential for carbon steels to limit corrosion.

Regular edge maintenance

A suitable honing rod can help maintain cutting performance between sharpenings. Always choose the type of honing rod according to the hardness and construction of the specific knife.

Sharpening on stones

When routine maintenance is no longer sufficient, a new edge must be created on a suitable sharpening stone or the knife should be professionally sharpened.

Safe knife storage

Do not store a Gyuto loose in a drawer among other cutlery. The edge can be damaged and there is a risk of injury when reaching for the knife. A magnetic strip, stable block, stand or protective sheath matching the blade length and height is suitable.
