Professional Japanese peeler · adjustable cutting thickness
A specialised tool with a replaceable 50 mm wide blade for creating fine shavings from root vegetables and for precise peeling.
The Sasagaki peeler CHIBA Japan is designed for the traditional Japanese sasagaki technique, in which thin diagonal shavings are cut from gobō, or burdock root. It is also useful for preparing carrots, radishes and other firm vegetables.
The sharp Japanese stainless-steel blade delivers a clean cut, while the side rotary control allows fine adjustment of the thickness of the resulting shavings. When cutting performance decreases, the blade can be touched up on a suitable sharpening stone or easily replaced without tools.
Notice: replacement blades are not included in the package. A set of six replacement blades is sold separately under the designation CHIBA-23.

What is included in the package?
The package contains the Sasagaki peeler with one blade installed. Replacement blades are not included and must be ordered separately as CHIBA-23 – set of 6 pieces.
Using the peeler
- Wash the vegetable and hold it firmly away from the path of the blade.
- Set the desired cutting thickness using the side rotary control.
- Guide the peeler with smooth strokes away from your hand and without excessive pressure.
- After use, rinse the tool, dry it thoroughly and store it out of reach of children.
Sharpening and replacing the blade
Reduced cutting performance does not necessarily mean the blade must be replaced immediately. The removed blade can be carefully touched up on a flat sharpening stone. Maintain the original edge angle, work with light pressure and check the result after several strokes. If the blade is damaged, deformed or can no longer be sharpened satisfactorily, replace it with a new one.
