The Japanese Sashimi slicing knife from the Suncraft Senzo Classic Damascus series features an ultra-sharp cutting core made from Japanese VG10 steel, encased on each side between 16 layers of soft Damascus steel, finished with a Tsuchime (hammered finish). The Western-style ergonomic handle is crafted from Pakka-wood. The blade is separated from the handle by a red, heat-resistant ring. This knife is ideal for preparing sushi or precisely slicing roasts, ham, and beef carpaccio. Blade length 210 mm.

Sashimi Slicing Knife from the Suncraft Senzo Classic Series

This very sharp Japanese Sashimi knife from the Suncraft Senzo Classic Tsuchime Damascus series features an ultra-sharp cutting core made from Japanese VG10 steel, HRC 60-61, sandwiched between 32 layers of soft, stainless Damascus steel. This ensures exceptional strength, durability, and resilience. Ensure every turkey, roast, and ham is perfectly sliced with effortless movement and manoeuvrability using this knife. If you're a fan of beef carpaccio, this knife is an essential addition to your kitchen.

The knife blade is separated from the handle by a thin, red, heat-resistant ring, which allows the steel and wood to expand and contract safely, even in extreme conditions. The handle is made of Pakkawood material (an imitation of ebony wood). The Pakkawood material is very resistant to water, moisture and is completely odourless. You can be sure that the material will not corrode, oxidise or become softer and more brittle over time. This material requires virtually no maintenance, unlike traditional materials such as wood.

The Suncraft Senzo Classic Tsuchime Damascus knives are slightly heavier than standard Japanese knives. The added weight is the result of cold blade forging. The usual thickness of the semi-finished product before pressing is 4 mm. This process, called Tsuchime (hammered surface), gives the knife not only a great appearance, but also prevents the cut material from sticking to the blade.
