Hand wash only

Do not wash the knife in the dishwasher. After use, wash it with a soft sponge, dry it, and store it so that the blade does not touch other metal utensils.

Protect the hard blade

A hardness of around 65 HRC ensures excellent blade durability, but the knife is not designed for bones, frozen foods, or prying or twisting while cutting.

Sharpening on stones

To maintain performance, use high-quality water-based sharpening stones. Coarse sharpening rods are not suitable for Japanese knives of this hardness.

SPG STRIX is a newer powder-metal stainless steel focused on very high hardness, edge retention, corrosion resistance, and good sharpenability. SG2 is also a premium powder-metal steel, but STRIX is presented as a more modern material with a different metallurgical structure.

Is SPG STRIX stainless steel?

Yes. SPG STRIX is a powder-metalled stainless steel. However, we recommend hand washing and immediate drying, as this is a premium kitchen knife with a hand-finished surface.

What does a hardness of around 65 HRC mean?

This is a very high hardness for a kitchen knife. It helps ensure long-lasting sharpness and a precise cut, but at the same time requires careful handling—avoid cutting bones, frozen ingredients, or hard shells.
