The Japanese SUNCRAFT Shinari flexible diamond file is a compact handheld sharpener for quick maintenance of kitchen knives, scissors, slicers and selected garden tools.

The flexible sharpening section adapts to the edge when applied lightly and makes it easier to maintain the working angle. The #325 diamond surface has a pronounced abrasive effect, so only light pressure and a few controlled strokes are required.

Quick maintenance without preparing a sharpening stone

The file is suitable when the knife still cuts but the edge has lost its original performance. There is no need to soak a stone or prepare a sharpening station – a few light, controlled strokes are enough.

How does the flexible file work?

The sharpening section bends slightly when it comes into contact with the edge. This helps compensate for small deviations in hand guidance and makes it easier to maintain working contact between the diamond surface and the edge bevel.

The surface consists of #325 diamond abrasive. This is a relatively coarse sharpening surface with fast material removal. It is therefore unnecessary to press hard on the file or perform a large number of strokes.

Flexible does not mean the file should be bent by force

The file is designed to flex slightly during sharpening. Do not use it as a pry bar, bend it over a sharp edge or attempt to permanently reshape the sharpening section.

How to sharpen a kitchen knife correctly

  1. Place the knife on a stable work surface with the edge facing away from your body.
  2. Place the diamond section against the edge bevel at the knife’s existing angle.
  3. Using a light movement, guide the file from the heel of the blade towards the tip.
  4. Treat the other side of a double-bevel knife in the same way.
  5. Begin with a few strokes and check the result continuously.
  6. After finishing, wash and dry the knife so that no metal particles remain on the blade.

Use light pressure only

The #325 diamond abrasive removes material quickly. Excessive pressure may unnecessarily increase steel removal, create an uneven bevel or damage a fine edge.

Scissor maintenance

With scissors, primarily sharpen the outer bevelled side of the blade. Do not modify the inner contact surface without the necessary experience, as changing its geometry may prevent the blades from meeting correctly.

If the scissors can be taken apart, work with each part separately. Open non-detachable scissors as far as possible and guide the file carefully away from your hand. Maintain the original bevel angle and use light pressure only.
