Kitchen and butcher’s knives made from German 1.4116 steel

Stainless steel for everyday use

German 1.4116 stainless steel is popular for its balanced combination of sharpness, toughness, corrosion resistance and easy sharpening. It is suitable for home kitchens, catering establishments and regular meat processing.

Who are knives made from 1.4116 steel suitable for?

They are a good choice for customers who want a practical stainless-steel knife without demanding maintenance. The steel is not as hard as some premium Japanese or powder steels, but it is generally tougher, easier to sharpen and better able to withstand intensive everyday use.

Good corrosion resistance The high chromium content helps protect the blade during normal contact with moisture and food.
Toughness for everyday work Correctly heat-treated steel offers practical resistance to minor edge damage during normal use.
Easy edge restoration 1.4116 steel is generally easier to sharpen than very hard Japanese and powder steels.

Quick guide

Is 1.4116 steel the right choice for you?

Yes, if you want:

  • a stainless-steel kitchen or butcher knife for regular use,
  • simple maintenance and good corrosion resistance,
  • a tougher edge that can be restored relatively easily,
  • a practical balance of price, performance and service life,
  • a knife suitable for both home use and professional catering.

Consider a different material if you require exceptionally long retention of a very fine edge and are prepared for more careful handling. In that case, also consider high-performance stainless or powder steels.

What is German 1.4116 steel?

1.4116 steel is a corrosion-resistant martensitic steel used primarily for kitchen, butcher and catering knives. You may also encounter the designation DIN X50CrMoV15 or related commercial and national names.

The resulting properties of a knife do not depend solely on the name of the steel. Heat treatment, blade grind, blade thickness, edge geometry and the quality of the final sharpening also play an important role. Two knives made from the same steel may therefore not perform in exactly the same way.

Approximate chemical composition

Element Approximate proportion Effect on the properties of the steel
Carbon 0.45–0.55% Supports hardness and the ability to form a sharp edge
Chromium 14–15% Makes a significant contribution to corrosion resistance
Molybdenum 0.5–0.8% Supports strength and corrosion resistance
Vanadium Small amount Contributes to a finer structure and wear resistance

Important notice regarding specifications

The stated composition is approximate and may vary slightly within the relevant standard. Hardness also differs between individual knives depending on the manufacturer and heat treatment. Always follow the specifications provided for the particular product.

What properties can you expect?

Corrosion resistance Very good when washed and dried correctly
Typical knife hardness Approximately 54–58 HRC depending on the manufacturer and heat treatment
Edge retention Good for everyday kitchen and catering use
Toughness Good, generally higher than that of very hard premium steels
Sharpening difficulty Low to moderate; the edge can be restored relatively easily
Maintenance requirements Low, although hand washing and immediate drying are still recommended

1.4116 versus harder Japanese steels

Property 1.4116 steel Harder Japanese steels
Maintenance Simpler Often requires more careful handling
Sharpening Generally easier and faster May be more time-consuming
Fine-edge retention Good Usually longer
Toughness Good for normal work A fine edge may be more sensitive
Ideal user Home users, catering establishments and butcher operations Demanding users seeking maximum cutting performance

How should knives made from 1.4116 steel be sharpened?

A sharpening stone with a grit of approximately #1000 is suitable for restoring a normally dulled edge. For a finer finish, you can continue with a stone of approximately #3000 to #6000. Always adapt the exact process to the condition of the edge and the construction of the particular knife.

A sharpening angle of approximately 15–20° per side is often used for conventional European kitchen and butcher knives made from this steel. Maintaining the angle evenly along the entire edge is more important than trying to achieve the smallest possible angle.

Care and safe use

  • Wash the knife by hand and dry it thoroughly immediately after washing.
  • Do not leave even a stainless-steel knife in water or a damp environment for a long time.
  • Do not put the knife in a dishwasher, which may damage both the edge and the handle material.
  • Use a wooden or suitable plastic cutting board.
  • Do not use a standard kitchen knife to cut bones or frozen food.
  • Do not use the blade for prying, opening packaging or tightening screws.
  • Store the knife so that its edge does not touch other metal objects.

Frequently asked questions

Is 1.4116 steel stainless?

Yes, it is a corrosion-resistant steel with a high chromium content. Even so, we recommend washing the knife by hand and drying it immediately after use.

What hardness do knives made from 1.4116 steel have?

Most commonly approximately 54–58 HRC. The exact hardness depends on the manufacturer and the heat treatment of the particular knife.

Is 1.4116 steel suitable for a first high-quality knife?

Yes. It offers simple maintenance, good toughness and easier sharpening, which will be appreciated by beginners and ordinary households.

Is 1.4116 the same as X50CrMoV15?

These designations are often used for very closely related standardised materials. The specific steel declaration should always be verified with the particular manufacturer and product.

How often does the knife need to be sharpened?

It depends on how frequently it is used, the cutting board, the cutting technique and the edge geometry. Regular use of a suitable honing steel can extend the interval between sharpenings.

What stone grit should you choose?

A stone around #1000 is often used for normal edge restoration. Finer stones of approximately #3000 to #6000 are used for smoothing and finishing the edge.

Can a knife made from 1.4116 steel be washed in a dishwasher?

We do not recommend it. A dishwasher may accelerate edge dulling, cause stains and damage the handle or its joints.

Is this steel suitable for butcher knives?

Yes. Thanks to its toughness, corrosion resistance and easy sharpening, it is also used for boning, portioning and other butcher knives.

Can a knife made from 1.4116 steel be used to chop bones?

Only if the particular knife is designated by the manufacturer as a bone cleaver. Do not use a standard chef’s, slicing or boning knife for chopping bones.
