Main advantages of the knife

360 mm long blade

The long blade allows a smooth cut to be guided through an entire cake layer, loaf or Swiss roll and reduces the need for short repeated strokes.

Fine wavy edge

The special edge profile penetrates crust easily while helping to reduce crushing of soft crumb, cream, fruit or filling.

Low weight of approximately 150 g

Despite the long blade, the knife remains lightweight and easy to control. This places less strain on the wrist and forearm during repeated slicing.

Made in Seki, Japan

The NAMIBA MONSTER range was developed in cooperation with professionals from bakery and confectionery operations. The knife is made in the Japanese city of Seki, known for its long tradition of blade production.

Why choose the 360 mm version?

NAMIBA MONSTER 360 mm is designed primarily for confectionery products and baked goods where an ordinary short knife cannot make a continuous cut. The blade provides sufficient working reach for larger products while remaining easy to handle even on a smaller work surface.

The manufacturer recommends this length, for example, for cakes measuring approximately 4 to 6 Japanese sun, which is about 12 to 18 cm. In practice, the knife can be used for everything from horizontally dividing sponge cake layers to portioning finished cakes, Swiss rolls and fruit tarts.

Practical professional length

The 360 mm version is more agile than the 450 mm model and is suitable for most cakes, cake layers and large loaves. For full confectionery sheets and exceptionally large products, we recommend the longer 450 mm version.

What can the knife be used for?

Use Advantage of the long wavy edge
Sponge cake layers Makes it easier to divide a cake layer horizontally into even layers.
Cakes and Swiss rolls Helps create clean portions without excessively compressing the cream or dough.
Bread and campagne bread The fine serration penetrates a firm crust while reducing crushing of the crumb.
Focaccia and tall baked goods The long blade makes it easier to create a straight cut across the full width of the product.
Fruit tarts and tartlets Cuts through pastry, fruit and cream with less risk of shifting the individual layers.
Filled sandwiches Helps preserve the shape of the bread and the arrangement of the filling.

Fine serration for a clean cut

The blade uses a fine and sharp wavy profile. It gradually bites into the surface of the food and, when guided correctly, reduces crumbling, tearing and compression of the individual layers.

The knife also handles combinations of different textures well. It can pass through a firmer crust, soft crumb, cream and fruit without the need to apply excessive pressure to the blade.

The tip of the blade includes a straight cutting section that helps complete the cut all the way to the board and reduces the risk of leaving the bottom layer uncut.

Molybdenum-vanadium steel and lightweight handle

The blade is made from stainless molybdenum-vanadium steel. This material provides good corrosion resistance and helps retain cutting performance during regular professional use.

The ergonomic polypropylene handle contributes to the low weight and secure control of the knife. Its shape was designed to be comfortable even for users with smaller hands and to help reduce fatigue during longer periods of work.

Who is the knife suitable for?

Recommended for

  • confectioneries, bakeries, bistros and catering operations,
  • slicing cakes, Swiss rolls and sponge cake layers,
  • large loaves, focaccia and tall baked goods,
  • users who need a long yet still easy-to-control knife,
  • demanding home bakers and baking enthusiasts.

Not intended for

  • chopping bones or other heavy butchery work,
  • cutting hard frozen foods,
  • prying, twisting or bending the blade,

Important sharpening information

The special wavy edge is not maintained in the same way as a smooth blade. Do not use an ordinary sharpening stone, pull-through sharpener or honing rod, as this could damage the fine tooth profile. The manufacturer states that this wavy edge is not intended for routine resharpening.

Need a longer version?

For full confectionery sheets, large focaccia and exceptionally large loaves, choose the professional SUNCRAFT NAMIBA MONSTER 450 mm knife . The longer blade provides a greater working reach, while the 360 mm version offers easier handling.
