Long working breaking and portioning knife with a 260 mm stainless 4Cr13MoV blade, 56–58 HRC hardness, 2.0 mm blade thickness, Granton hollows and ergonomic PP + TPE handle. Breaking knife Braking Granton 260 mm Dellinger® Butcher’s is a working knife designed for processing larger meat cuts, portioning, boning and long draw cuts. The 260 mm blade handles larger pieces of beef, pork, poultry, game and meat prepared for barbecue, smoking or further kitchen processing.
The long blade with a slightly curved profile helps guide a smooth cut with good movement control. The 2.0 mm thickness and tapered profile reduce resistance when cutting.
Practical Granton hollows help reduce meat sticking to the blade surface, making cutting smoother and more efficient during longer portioning.
