Nakiri – the Japanese vegetable specialist

Nakiri is a traditional Japanese kitchen knife shape with a tall, nearly rectangular blade. Unlike a chef's knife, it is not primarily intended for rocking cuts. It excels at straight downward cuts through ingredients onto the board.

Use it for onions, carrots, courgettes, cucumbers, cabbage, leafy greens, mushrooms and herbs, as well as fine slices. Its broad blade also helps transfer prepared ingredients. It is not a bone cleaver.

89-layer Damascus blade with 10Cr15CoMoV core

The 10Cr15CoMoV cutting core is hardened to 61 ± 1 HRC and clad with 88 outer stainless-steel layers. Together they form 89 layers with a characteristic Damascus pattern.

10Cr15CoMoV is sometimes compared with Japanese VG-10 for its properties, but it is not an identical standardized equivalent. This series uses controlled sandblasting without chemical etching to highlight the Damascus pattern; the blade is vacuum heat-treated and hand-finished.

Symmetrical 50/50 sharpening

The blade has a symmetrical 50/50 bevel, with even geometry on both sides, so it suits right- and left-handed cooks. The 50/50 designation does not specify a sharpening angle.

Handle: prehistory, desert and ocean

The ergonomic oval handle uses several natural materials. American desert ironwood provides dense structure and rich grain. Fossil mammoth molar displays unique layered colours. Black Lip Mother of Pearl adds iridescent details, while a polished SS304 stainless bolster joins blade and handle.

Natural grain and colour vary between individual knives, making every piece visually distinctive.

Marek's tip

Nakiri is an excellent choice if you prepare vegetables often. Its straighter edge supports full downward cuts, and its tall blade helps move chopped ingredients to the pan. Use a quality wooden or suitable plastic board, never glass or stone.

  • Do not chop bones or frozen foods and do not pry with the blade.
  • Protect natural handle materials from prolonged moisture, impacts and abrupt temperature changes.
  • Maintain the edge using a suitable sharpening stone and moderate pressure.
Warning: Although Nakiri resembles a cleaver, it is made for precise vegetable cutting, not forceful bone chopping.
