SUNCRAFT SENZO FINEST SPG STRIX® Gyuto 210 mm is a primary chef’s knife for demanding home cooks and professionals. Its long blade is suitable for cutting, portioning and slicing meat, fish, vegetables, fruit and fresh herbs.
Gyuto is the Japanese counterpart of the European chef’s knife. The slimmer blade geometry supports precise and effortless passage through ingredients, while the 210 mm length provides sufficient working range for most common kitchen tasks.
At the heart of the three-layer blade is modern stainless SPG STRIX® powder steel. A hardness of approximately 65 HRC makes it possible to create an exceptionally fine edge with long-lasting retention. What is this knife not intended for?
Do not use the Gyuto for chopping bones, joints, hard stones or frozen food. Do not pry or twist the hard, finely ground blade in the ingredient, and protect it from being dropped.
SPG STRIX® powder steel
SPG STRIX® is a premium stainless powder steel developed by the Japanese company Takefu Special Steel specifically for high-performance cutting tools. During its development, the manufacturer worked with a reinforced metal-matrix concept known as Strong Matrix.
This approach makes it possible to achieve a hardness of approximately 65 HRC, high cutting performance and long-lasting edge retention without making the steel as difficult to sharpen as some other powder steels containing a large amount of very hard carbides.
The manufacturer does not publicly disclose the precise chemical composition of SPG STRIX®. It is a separate steel, not merely another trade designation for SG2, SPG2 or R2 steel.
What does a hardness of 65 HRC mean?
The high hardness makes it possible to create a thin and long-lasting edge. At the same time, however, it requires a suitable cutting board and a technique that avoids lateral stress on the blade.
Three-layer blade construction
The hard SPG STRIX® steel core forms part of a three-layer construction. The outer layers support the toughness of the blade and protect its hard cutting core. Combining the layers makes it possible to use the advantages of very hard steel in a practical kitchen knife.
The dark upper section of the blade creates an appearance inspired by traditional Kurouchi finishing. The hammered Tsuchime texture gives each piece a distinctive surface and may reduce full contact between some ingredients and the blade.
Octagonal Pakka wood handle
The Asian-style handle is made from laminated Pakka wood with a contrasting grain resembling Zebrawood. The laminated construction offers greater dimensional stability and resistance to normal operational moisture than untreated natural wood.
The octagonal profile helps control the orientation of the blade and is suitable for either hand. It also works well with a pinch grip, in which the thumb and index finger hold the blade in front of the handle.

Who is the knife suitable for?
The 210 mm Gyuto is suitable for more experienced home cooks, professionals and enthusiasts looking for one primary knife with very high cutting performance. It makes sense for users who are prepared to use a suitable cutting board and give the high-quality edge proper care.
For a complete beginner who wants a more durable knife that tolerates less precise handling, a softer and tougher kitchen steel may be more practical. SPG STRIX® offers higher performance but requires an appropriate technique.
Correct use
- Use a smooth forward, downward or controlled rocking motion.
- Do not strike the cutting board with excessive force.
- Do not pry or twist the blade in the ingredient.
- Gather chopped ingredients with the spine rather than the edge of the knife.
- Protect the tip and edge from drops and lateral impacts.
A suitable cutting board is essential
Use wood, high-quality plastic or synthetic rubber. Glass, stone, ceramic and worktops may quickly dull or damage the fine edge. You can find a suitable surface in the cutting boards category.
Washing and safe storage
- Washing: hand wash only, using lukewarm water and a soft sponge.
- Drying: dry the knife thoroughly immediately after washing.
- Dishwasher: high temperatures, chemicals and impacts may damage the blade and handle.
- Storage: use a knife block, magnetic holder or separate edge guard.
- Safety: never leave the knife hidden in a sink or loose among metal utensils.

Sharpening SPG STRIX® steel
Use high-quality water sharpening stones to restore the edge. A grit of approximately JIS #1000 is suitable for routine sharpening. Finishing afterwards on a stone of approximately #3000 to #6000 helps smooth and refine the edge.
Maintain a consistent angle and use only moderate pressure. Neither a coarse steel honing rod nor an aggressive pull-through sharpener is ideal for a fine edge with a hardness of around 65 HRC.
