SHAPTON GlassStone #1000, #3000 and #8000

From restoring a working edge through refining it to a very fine final finish. Three progressive Japanese sharpening stones are complemented by a stable holder for safer and more comfortable sharpening.

The SHAPTON GlassStone Japanese sharpening-stone set is a complete sharpening system for users who want to sharpen kitchen knives progressively and with full control. It contains stones with JIS #1000, #3000 and #8000 grits and a practical sharpening-stone holder.

The #1000 stone creates a new working edge, #3000 refines and smooths it, while the very fine #8000 stone is used for final finishing and polishing. The set is suitable for quality kitchen knives made from stainless, carbon and very hard steels.

What does the set contain?

1. SHAPTON GlassStone JIS #1000 sharpening stone

Basic sharpening stone for creating a new working edge. Use it on a dull knife that already requires greater pressure when cutting. The #1000 grit represents the main sharpening stage of the entire set.

2. SHAPTON GlassStone JIS #3000 sharpening stone

It follows the basic sharpening performed with the #1000 stone. It removes coarser marks from the previous step, refines the bevel and creates a smoother, more precise and more refined working edge.

3. SHAPTON GlassStone JIS #8000 polishing stone

A very fine finishing stone designed for the final smoothing and polishing of the edge. It helps remove fine marks left by the #3000 stone and create a precisely finished cutting edge.

Practical tip: If the knife is only slightly dull and the edge is not damaged, you do not always have to start with the #1000 stone. For light maintenance, you can begin with #3000 and then continue with #8000.

How to use the stones correctly

  1. Place the selected stone in the holder and check its stability.
  2. Wet the sharpening surface with clean water before use.
  3. Guide the knife across the stone at a constant angle and without excessive pressure.
  4. Work evenly along the entire edge and remember to sharpen both sides of the blade.
  5. After finishing on the #1000 stone, clean the blade and continue with #3000.
  6. Use the #8000 stone for a very fine finish.
  7. After use, rinse the stones, allow them to air-dry and only then store them.

Keep the surface wet continuously during sharpening. We recommend using water for sharpening. The use of oil is possible, but neither the manufacturer nor Dellinger recommends it.
