Shapton RockStar – fast Japanese sharpening stones

A premium range of synthetic water stones for repairs, basic sharpening, fine finishing and final edge refinement. Choose #320, #1000, #3000 or #6000 according to the condition of the knife and the desired result.

Shapton RockStar sharpening stones are designed for users who want to sharpen kitchen knives quickly, precisely and with good control over the edge. They are suitable for European and Japanese kitchen knives, harder knife steels and selected craft tools.

Each grit has a clearly defined purpose. The JIS #320 stone is intended for repairs and rapid material removal, JIS #1000 creates a working edge, JIS #3000 smooths sharpening marks and JIS #6000 provides a fine final finish.

All RockStar stones have working dimensions of 210 × 70 × 10 mm. They do not require prolonged soaking before use—simply wet the working surface with water and maintain a thin water film during sharpening.

How should RockStar stones be used correctly?

  1. Place the stone in a stable sharpening-stone holder.
  2. Wet the working surface with clean water. Do not use oil.
  3. Respect the original edge geometry and maintain a stable angle during sharpening.
  4. Guide the blade evenly from heel to tip and monitor the formation of a burr.
  5. Once the edge has been formed, gradually reduce the pressure or move to a finer stone.
  6. Before moving to the next grit, rinse the knife, your hands and the working surface.
  7. After sharpening, rinse the stone and allow it to air-dry separately.

Do not use excessive force during sharpening

RockStar stones work quickly. Excessive pressure reduces control over the angle and may increase the risk of edge damage on fine or hard blades. Use smooth strokes and gradually reduce the pressure.

Cleaning, flattening and storage

Metal particles and sharpening slurry collect on the surface of the stone during sharpening. Therefore, rinse the stone with clean water after use. A clogged working surface can be cleaned regularly with a suitable cleaning stone or disc.

Also check the flatness of the sharpening surface regularly. A dished stone reduces contact with the edge and makes it harder to maintain a stable angle. Flatten a significantly uneven stone using a suitable lapping or flattening plate.

  • Do not use the stones with oil.
  • Do not leave them submerged in water unnecessarily.
  • Rinse off the sharpening slurry after use.
  • Allow them to air-dry at room temperature.
  • Do not seal a damp stone in an airtight container.
  • Store individual grits so that they do not contaminate one another with abrasive particles.

Which Shapton RockStar should I choose first?

RockStar JIS #1000 is the most universal first choice. It is suitable for basic sharpening and restoring the working edge of normally dull kitchen knives.

When do I need a JIS #320 stone?

Use the #320 grit for a very dull edge, minor damage or rapid bevel restoration. After the repair, always continue with at least the #1000 stone.

What is the JIS #3000 stone used for?

The #3000 stone follows basic sharpening. It smooths the marks left by the #1000 stone, refines the bevel and helps create a cleaner working edge.

Can a dull knife be sharpened using only a #6000 stone?

Not efficiently. The #6000 stone is intended for the final smoothing of an already formed edge. First sharpen a dull knife on the #1000 stone and, depending on the desired result, continue through #3000.

Are RockStar stones suitable for ceramic knives?

No. This series is intended for knives and tools with steel blades. Sharpening ceramic knives requires different equipment and a suitable professional procedure.

How can I tell when a sharpening stone needs flattening?

If the working surface is dished in the centre, the knife moves unevenly across the stone or continuous contact with the bevel cannot be maintained, it is time to flatten the stone using a suitable lapping plate.

How should the stones be stored after sharpening?

Rinse the stone, allow it to air-dry thoroughly at room temperature and then store it in a dry place. Do not seal a damp stone in an airtight container.

Is it better to buy one stone or a complete set?

For basic maintenance, #1000 may be sufficient. The #1000/#3000 set is suitable for restoring and finely finishing the edge. A version supplemented with #6000 makes sense for quality Japanese knives and a very fine finish.
