Flexible boning and filleting knife 170 mm

Lightweight Japanese knife with a narrow, flexible blade that closely follows the shape of bones and makes portioning meat, filleting fish and removing skin, fat and membranes easier.

Suncraft Senzo Clad Flexible 170 mm combines the properties of a boning and filleting knife. The curved, narrow and flexible blade easily reaches less accessible areas and allows precise cuts to be guided closely along bones or beneath fish skin.

The blade core is made from high-quality Japanese stainless AUS-10 steel with a hardness of 58 ± 1 HRC. The three-layer construction provides a good balance of sharpness, durability and easy maintenance. The ergonomic Western-style Pakkawood handle is secured with three rivets and provides a confident grip during precise work.
