Japanese Santoku knife 165 mm Suncraft Senzo Clad

Universal kitchen knife for cutting vegetables, boneless meat, fish, fruit and fresh herbs. The practical 165 mm blade length offers precise guidance, good control and sufficient working space for most everyday kitchen tasks.

Suncraft Senzo Clad Santoku 165 mm is a versatile Japanese kitchen knife suitable for home cooks and more experienced users. The name Santoku refers to the “three virtues” – working with meat, fish and vegetables.

The wide blade provides sufficient clearance for the fingers and makes it easy to transfer chopped ingredients from the cutting board. At the same time, the 165 mm length remains easy to control even in a smaller kitchen.

The blade has a three-layer construction with a core made from Japanese stainless AUS-10 steel with a hardness of 58 ± 1 HRC. The ergonomic Western-style handle is made from durable Pakkawood.

Is this Santoku suitable as a first higher-quality knife?

Yes. The 165 mm length is easy to control and the universal blade shape covers most everyday cooking tasks. The knife therefore makes sense as a primary kitchen knife and as a companion to a smaller paring knife and bread knife.

Blade made from Japanese AUS-10 steel

The blade is made as a three-layer laminate. The cutting core consists of stainless AUS-10 steel, while the outer layers protect and support it. A hardness of 58 ± 1 HRC represents a practical compromise between the ability to retain a sharp edge and durability during normal kitchen use.

AUS-10 also contains vanadium, which contributes to the steel’s wear resistance. Stainless steel is not completely maintenance-free, however – wash the knife after use and dry it immediately.

Pakkawood handle

Pakkawood is a layered material based on wood and resin. It retains the pleasant appearance of wood while offering greater dimensional stability and resistance to normal kitchen moisture.

The ergonomic Western-style handle feels natural to users accustomed to European kitchen knives and provides good control during both shorter and longer cuts.

What not to do with the Santoku knife

The knife is not intended for chopping bones, cutting frozen food, prying or twisting the blade in hard ingredients. Use a cleaver or specialised knife for these tasks.

Care and safe storage

  • Wash the knife by hand using lukewarm water and a soft sponge.
  • Do not place it in a dishwasher or leave it in the sink for an extended period.
  • Dry the blade and handle immediately after washing.
  • Use a wooden, high-quality plastic or rubber cutting board.
  • Do not cut on glass, stone, ceramic or directly on a plate.
  • Store the knife in a block, on a magnetic holder or in a protective sheath.

For safe storage, we recommend a sheath or edge guard. The blade should not come into loose contact with other metal objects in a drawer.

Sharpening the knife

For routine restoration of cutting performance, a water sharpening stone of approximately JIS #1000 is suitable. A finer finish can be achieved with a JIS #3000 stone.

When you are new to sharpening, you can attend a knife-sharpening course or entrust the knife to a professional sharpener.
