SHAPTON GlassStone #2000 is a medium-fine sharpening stone for knives that are not seriously damaged but need their cutting performance restored, marks from coarser sharpening refined or the working edge finished. It is suitable for home cooks, enthusiasts and experienced sharpening-stone users.
The abrasive layer with JIS #2000 grit and an abrasive-particle size of 7.35 μm provides controlled sharpening performance and a finer result than ordinary basic stones. The stone can be used after #500 or #1000 grit, or independently for regularly maintained knives that are only slightly dull.

How to use the sharpening stone
- Wet the surface with water. Prolonged soaking is unnecessary. The stone can be soaked briefly before use if required.
- Place the stone in a stable holder. It must not move or wobble during use.
- Choose the correct angle. For most kitchen knives, approximately 12–20° per side is used depending on the blade construction.
- Guide the blade evenly. Use light to medium pressure and sharpen the full length of the edge from heel to tip.
- Keep adding water. The surface must remain wet so that loosened steel and abrasive particles are washed away.
- Rinse the stone after use and allow it to air-dry. Do not store it wet in a closed container.
Important: We recommend using water for sharpening. Although oil can technically be used on some sharpening stones, we do not recommend it for this stone.

When should you choose a different grit?
If the knife is very dull, has a damaged edge or small chips, begin with a coarser stone. The #2000 grit is not designed for rapid repairs to a significantly damaged blade. For a more mirror-like finish, you can subsequently continue with a higher-grit stone.

Sharpening-stone care
- Rinse the stone thoroughly with clean water after use.
- Allow it to air-dry at room temperature.
- Do not expose the stone to frost, direct sunlight or sudden temperature changes.
- Do not dry it on a radiator or another heat source.
- Check the flatness of the sharpening surface regularly.
- Store it dry and protect it from drops and impacts.
Warning
The stone is not intended for sharpening ceramic knives. Always use a stable non-slip holder and guide the blade in a direction that does not present a risk of injury. Do not press the knife into the stone with excessive force.
